Blueberry Hill Cornbread


We are so grateful to live in California where the produce at our local market is bountiful all year long. I am not a gardener, Larry thinks he is, but by the look of the potted plants outside, he tends to kill the earth. 

My late dad grew tomatoes and I would give him a blue ribbon for those "Land of the Giants" zucchinis his garden churned out every year. Between playing tennis, making museum worthy stain glass, (that did win blue ribbons), and almost blowing up the family and the block with his gas barbecue, my dad was a busy guy.

Remember when the blackening of every food imaginable, you know blackened salmon, blackened veggies, blackened tofu was all the rage back in the 80's? My dad started the blackened craze with his gas barbecue. On the day the barbecue gas line almost crucified the neighborhood, my dad managed to blacken a delicious Yves veggie burger and corn on the cob for me. That Yves burger was especially good with my dad's fresh tomatoes. Good thing my dinner cooked up first, before the neighbor spotted the faulty power line. Nobody else got their meaty sandwiches, so no animals were harmed on that executioner's grill.

In New York we had one tree that was vertical to the evil barbecue. It was a crab apple tree. That tree was kind of an asshole, annoying and useless. Even the tree was peeved at it's dead fruit bearing self, and was always trying to rid itself of it's rotten crabby apples. It was Heidi's and my job to pick up the post mortem apples and bag them. I think my mother paid us one penny per fifty croaked apples. Heidi and I were migrant workers in our own backyard. 

Ah the fruits of summer. I could never have whipped this sweet summer cornbread up with those pieces of crappy crabby apples. After five summers of picking and saving Heidi and I were able to purchase a clam of blueberries to feed our growing family of ten.


Blueberry Hill Cornbread
Feeds an entire family headed West

1.5 C of unbleached organic flour
2/3 C coconut sugar
1/2 C Corn meal
1 T baking powder
1/2 tsp sea salt
1 1/4 C rice milk
2 T flaxseed mixed with 6 T of water
1/3 C canola oil
3 T coconut oil
2 C fresh blueberries
1 T lemon
1/3 C coconut sugar or 1/4 C of agave.
(1 packet stevia if not sweet enough)

Preheat oven to 350 degrees. Lightly grease an 8x8 baking pan. 
Prepare blueberry mixture. Gently toss blueberries with 1 T lemon, 1/3 C coconut  sugar. Set aside.
Combine flour, sugar, cornmeal, baking power and salt in a large bowl. 
In medium bowl combine rice milk or plant milk of your choice with flaxseed slurry, canola oil and 3 T of coconut oil. Add liquid mixture to the flour mixture and mix until blended. Fold in the blueberry mixture. Pour in to prepared pan and bake 35-40 minutes or until toothpick inserted comes out clean. Cool 10-15 minutes in pan on rack. Cut slices from pan. 

I suggest that you make this Blueberry Hill Cornbread right now, with no delay! Make this before blueberry season is over you and your family have to head to the hills.

A Dickensian Tale and 2013 Pie





We were going to do a Kickstarter campaign to get some funding for Veganville, which is how the above video began. We couldn't figure out a mission statement, and then we realized our mission was just to stay out of the Mission. Let's get real here, our real mission is to keep Larry out of the poky so we need money for that. Yeah, so our mission is to raise money...um for us. When you think about it what else could be more altruistic than giving money to our cause. Remember you can save your tax dollars by keeping us on the outside, and  you'll be giving to a worthy vegan cause- US. 
Please give what you can, and if your can't right now, please keep coming back to this blog, because it's never too late to donate to US. Thank you. 

Below please find  last year's Thanksgiving pie, called "Home Sweet Home Spelt Pie." I made this with the hope that it would not be our last home cooked meal.

This is not a baking mistake or a burnt crust from my baking. My "Home Sweet Home Spelt Pie" looked really good out of the oven. Unfortunately it got singed when Larry lit the house on fire. Still it manages to look festive, Right?

The recipe can be found in babycakes. It's a wonderful book, but Erin couldn't think of calling this anything other than "Apple Pie."  Hmmmph.

It's a Relaunch and It's a Cookbook Giveaway

I know, believe me I know what you are you saying. This is like the fifth time you have gone missing GiGi and about the sixth time you have left your readers in the lurch. And now you are back again? What makes your life so much more challenging than mine GiGi, that you haven't written a syllable in months?

I would say to you, yeah...well. 
I know, and  I am sorry, really... sorry. I know we all have challenges. I know that in this fast paced world we live in, we are all just trying to get along. We are inundated with to-do lists, new technologies and deep universal conundrums... I wonder if I can freeze this falafel, how can I lessen Fifi's hairballs, and when can I find time to lock myself in the closet and chug this pint of scotch? I have had those same concerns.

I came back to this blog to give you hope. If nothing else brothers and sisters have gratitude in knowing that my life sucks worse than yours. 

I am about to come clean and in a series of videos, tell you why I have not appeared at this page. Video 1 below. 

What better way to relaunch Veganville than with a video of my whereabouts, a giveaway and a review of my friend, Zsu Dever's new book, Everyday Vegan Eats.
Before I booked the above flight, I had a moment of good fortune. I had the opportunity to recipe test for Zsu's new book, Every Day Vegan Eats. Recipe testing can be especially fun when you send your husband aka Crazy Boy to five  different stores to hunt down a spice he never heard of before. For most people salt should be pretty easy to find, and a little salt can be found in most of Zsu's recipes.



The Alien Pearheads have decided to let me use their kitchen.
They had an abundance of tofu. I was able to revisit one of my favorite recipes from Zsu's book and I made the seafood variation of the marinated tofu and served it with Zsu's famous tartar sauce.

Recipe
14 ounces of extra firm tofu pressed overnight
2 C water
2 T savory broth mix
1/4 tsp salt
1 T sunflower oil

Cut pressed tofu into 1/2-inch cubes.
Heat water, broth mix, and salt in medium sauce pan. Bring to a boil and reduce to a simmer.
Add the tofu and simmer for 10 minutes. Remove from heat and allow the tofu to sit in the broth for an additional 10 minutes. You may also keep the broth in an airtight container in the refrigerator for a week before continuing the next step.
Drain the tofu. Heat the oil in a large skillet over medium heat. Add the tofu and cook, stirring until golden brown about ten minutes.
Season with salt and black pepper as needed. The tofu is now ready to use in recipes. Below is the seafood variation.

All of Zsu's recipes are straight forward easy to follow, and delicious. I grew up in Brooklyn and married a Sicilian, great eggplant parm and lasagna was nothing new to us. 

Still, Zsu managed to wow us with new versions. I've fed hungry organic Pearheads Zsu's 7 Layer Tex Mex Salad with vats of her ranch dressing, which has kept their hunger at bay for one more day. This book has been a life saver :) The pictures in Zsu Dever's book are total food porn, and fun to flip through even when you don't feel like cooking.

You Can't Beet That! It's Virtual Vegan Potluck Day!



    Welcome  Vegan Virtual Potluckers of the Global Blogosphere and Virtual Potluck Readers. Thank you to Ann of An Unrefined Vegan and all the Organizers of this exciting event. This year's secret ingredient "the Beet!!!"

Vegan misconception # 246. All vegans love all vegetables. If you follow my blog you would know that I have a gag reflex when it comes to cooked celery, and raw zucchini. Maybe I shouldn't have started this post off with "gag reflex" since I really want to entice you with culinary greatness.
Anyway,when it comes to root veggies, and beets in particular, I have a theory. I believe that there are two types of people in this world yeah just two, the Beet haters and the Beet lovers. 
Growing up, my dad always kept a bottle of borshdt in the frig. My sister Heidi has had an ongoing affair, (all her relationships should last this long) with beets since she was a kid. Back in our bad ass HS days we would come home late squinty and red eyed, and starving. 
The house would be dark and we would creep into the kitchen and pull everything from the refrigerator and place it on my mom's kitchen table. We would prepare a stoner honor roll student feast. While most kids were munching out on Mr. Nutter Butters, Heidi would concoct three beet sandwiches with whipped butter on pumpernickel, while I shoveled kosher pickles and my mom's coleslaw into my mouth. 

To prove my beet hater/ beet lover theory, I took to the streets to document the divide.



Roasted Yellow and Red Beets with Sweet Potato and Apple Doused with Creme Fraiche 


Pre- oven lovelies

4 medium sized red beets
1 large yellow beet 
1 sweet potato
1 pippin apple
canola spray
sea salt 
baked bread,or a pastry dough of your choice for a tarte, or pie, which was in my original plan but I was racing the clock
2T tofutti creme cheeze

1. Preheat oven to 400 degrees. Line a large baking pan with foil and spray.
2. Dice vegetables.
3. Spread vegetables and apple on pan according to a color scheme you enjoy.
4. Roast for 10 minutes on one side. Toss, make sure that you toss the red beets last so you don't get the red on the lighter colored veggies or apple. Remove from oven.

5.Bake bread, baguettes for 5 minutes at same temp. Spread bread bottoms with 1 T of vegan creme cheeze and return to oven for 2 minutes.

Roasted Hazelnuts (optional) for sprinkling on top

1/4  hazelnuts

Preheat oven to 300 degrees. Place hazelnuts on unlined cooking sheet. cook for about 7 minutes. Roll in clean kitchen towel to remove skins. Chop.


Quicky Creme Fraiche
3/4  vegan sour creme
1 T vegan creme cheese
2 T plain unsweetened soy milk
1/2 tsp fresh lemon juice
sea salt to taste


Add everything to small hand blender and blend for about a minute.

Why I Went Missing Chapter 1 and Cremey Basmati Pudding




I told my dad that I would get him anything he wanted to eat, except maybe tortilla chips which can cause choking even on a good day. Those pointed edges can be lethal.

Heidi and I suggested rice pudding. Rice Pudding was our favorite food when were in the joint. I asked Daddy if he was aware that penitentiaries don't serve any food that has sharp edges. Of course he knew, he was an officer of the law.

Anyway, Daddy's eyes lit up at the mention of rice pudding. I searched high and low for vegan rice pudding, not that my dad was a vegan or anything, I just wanted to give it a shot. (I probably shouldn't use the word shot in a story that talks about the can) Why doesn't anybody make vegan rice pudding? I would have been more than happy to make some but my mom had "keep out yellow tape" blocking her kitchen.

So, I wound up buying as many containers of Cozy Shack as I could find. Daddy ate some!

Here is the creamiest rice pudding I have ever had. I made it with basmati rice, coconut milk, agave, coconut oil, cashews and raisins and a pinch of cardamom. It went down a lot smoother than one of those pointy chips. Recipe coming soon.

Breaking News Missing Vegan Blogger Found and GF Bagels for the Press

       
                                                               
 Hi Everybody. My attorney, Skutch Sandalman, has advised the public to respect our family's privacy. I understand a lot of readers have expressed their concerns about my whereabouts. Larry and Jerry and I are truly grateful for all the comments and prayers we have received in the past month. We will be sure to reveal more about the case in the coming days. When Skutch first found me I was a little tired and woozy, and my mouth was as parched as PB without almond milk. I had also been on the lamb for a while. I had forgotten my tweezers and wax, which turned out to be a good thing for a few days, since without these modern conveniences I hardly resembled myself and did not want to be found right away. Skutch said I resembled a sloth when he found me. So as soon as I got home, I shared some water with Jerry, then I kissed he and his dad. I then got to work on making gluten free bagels for Skutch and Fletcher and the search crew. While the bagels were rising I had some time to pluck. I had to make a special spread for the press, so I whipped up some Green Goddess Cheez for Skutch and Fletcher and the rest of the nosy body reporters.

Gluten Free Caraway Seed Recipe

I totally riffed the Gluten Filled Bagel found in Isa Moskowitz' "Vegan Brunch". I exchanged the flour in equal amounts of Bob's Red Mill Gluten Free Flour and added 1/2 tsp xanthan gum. I used caraway seeds and Pink Himalayan salt for one type of bagel, and cinnamon raisin for another. Although the recipe says it yields 12, I would make 6 bigger bagels next time because my family has big mouths.

Green Goddess Creme Cheez Spread
Serving Suggestion: highly recommend heirloom tomatoes and micro greens for topping sandwich
1 C raw cashews (soaked in water at least 4 hours or overnight)
1/4-1/2 C Nooch
juice of 1/2 lemon
1 tsp canola oil

1/2 tsp. apple cider vinegar

2 Ripe avocados chunked
2 shots of your favorite hot sauce
sea salt to taste

Drain then blend cashews in high speed blender or food processor until smooth. This might take a few minutes. Add all the remaining ingredients except avocados. Blend until smooth and then add avocado. Blend until you have it just the way you like it, chunky or smooth.

Larry Takes Jerry Out to Flacos




Jerry: Hi everybody it's me, Jerry. I was feeling a little sad the other day, I mean I know there
was a Mommy sighting and everything but she's not here yet. I bet her cell phone ran out.
I bet Daddy didn't pay her cell phone bill.

Anyway, Daddy told me to keep my fingers crossed and my chin up. It's hard to cross my fingers because they can only go in one position. Kind of like my feet. I can keep my chin up if someone doesn't swivel my head.
Anyway, Daddy took me to my favorite place ever, Flacos in Berkeley and this what we had. Daddy can you tell everybody what we had?

Larry: Well, Jerry and Mommy and me love the taquitos which are made of a soy chicken mixture rolled in a corn tortilla and fried. They're doused in Flacos' signature avocado salsa, (also sold to-go for $6), which comes in mild or spicy, the latter with roasted habaneros, but we get it with mild because there is no happy medium.

Larry: Hi everybody in blog world, a huarache is a handmade corn tortilla layered with avocado, refried pinto beans, rice, cilantro, onions, cabbage and..
Jerry: There's cabbage in it, Daddy? No way!
Larry: Way, Jerry and it has radish and salsa too.

Jerry: And Flaco's has pozole that is almost as good as Mommy's.

Jerry: I wish Mommy was here!!!

Larry and Jerry scream and cry and get kicked out of Flacos. On their way home from Berkeley Larry and Jerry get hopeful when they see Mommy's poster on a telephone pole. Larry and Jerry know in their heart of hearts that if people in Berkeley are looking for GiGi, then by God Mommy will be home soon.



Yes, GiGi/Mommy will be home soon.

 Almost Celebratory Chocolate Cashew Marshmallow Frosting
1 C raw cashews soaked in water overnight
3/4 C coconut milk
1/3 C dark cocoa powder
1/4 C maple syrup (or more to taste)
1/4 C - 1/2 C Ricemellow Marshmallow Topping
1/4 C raw cashews chopped and roasted (optional) for topping

Soak Cashews overnight. Drain water. Place all ingredients in food processor and blend until smooth. Refrigerate. Remember to cool cakes thoroughly before icing. Top cake with roasted cashews.
Cake recipe coming soon. And then we can all light candles.

Mofo Case #16 Harriet the Spy and a Voopee Pie Giveaway




Everyday at exactly 3:40 p.m. Harriet would have an after school snack before sleuthing. She would indulge in her favorite cake and milk. Then one day little Harriet became lactose intolerant and she would throw up right as she was gathering clues at the scene of the crime. One day when Harriet was actually minding her own business and her P's and Q's she stumbled upon an evil slaughterhouse.

Harriet: I want to remember everything and want to know everything about all this meanness.
Ole Golly: Well you must remember that knowing everything won't do you a bit of good if you don't use it to bring beauty into this world.
Harriet: Okay I am a vegan now and I want to help all the world be vegan and compassionate. And I am here to help find GiGi. I miss her voopee pies and I miss GiGi too I guess. 
Ole Golly: You miss GiGi...you  guess?
Harriet: Well. GiGi is kind of annoying.
Ole Golly: True or False? 
Harriet: True. She's annoying but still I miss her. I know, let's have a contest to win some of GiGi's famous Veganville voopees. Maybe that will bring GiGi back. I mean if somebody wins and GiGi isn't here to bake them then nobody would win and that would make GiGi sad.

Sherlock Holmes: Except to go to a fresh produce market.
Dr. Watson: Or Trader Joe's. We will have to follow her footprints.
Sherlock Holmes: Keep in mind Watson that this blogger's footprints will be quite different. Vegans do not wear leather and the tracks they leave are extraordinary.
Dr.Watson: And she loathes Crocs.
Sherlock Holmes: Elementary my dear Watson, elementary.
Dr. Watson: Some tea, sir?
Sherlock Holmes: Lapsang Souchang please, oh and some 7% solution, Doctor.

Highly Suggested Serving Suggestion: superb with vegan clotted creme,or raspberry jam

1.5 C dates
1 C apricots soaked in a cup of tea that has been steeped with three tea bags
1/2 C dried figs
5 T dark cocoa powder
1/2 tsp cinnamon 
1/2 tsp nutmeg

Soak apricots in strong tea for about a half hour. Drain. Place all ingredients in food processor and blend until smooth. Line an 8x8 pan with plastic wrap.Turn the mixture into the pan and pat down.
Refrigerate for several hours or overnight.

Mofo Case # 14 Answers to Vegan Quiz/Clues Revealed and the Best GF Cupcake Ever

If you have been following the case of the Missing Vegan Blogger, perhaps you were kind enough to help headquarters with clues of GiGi's whereabouts by taking our last vegan quiz. If you weren't kind enough, here is the quiz.

Did you know that there are thousands upon thousands upon even more thousands of vegans globally? Even more importantly did you know that at least three amongst the thousands of vegans sometimes read this blog.

Well the stars must have collided on quiz day, because guess what, all three Veganville readers took the quiz. On the same day!

We here at GiGi headquarters recognized a startling similarity amongst Veganville's three readers. All three readers are Gluten Free. Yep, it's true. 

We would like to say that these readers all aced the quiz, but unfortunately they all fu**ed up.

We made the crappiest GF no sugar icing too, but we chucked that. It's okay, the cupcakes are good enough to stand up by themselves.

GF Maple Vanilla Cupcakes

2/3 C soy milk
1/2 tsp apple cider vinegar
1C GF flour (mix that has xanthan gum already in it)
1/3 C coconut flour
3/4 tsp baking powder
1/2 tsp baking soda
1/8th tsp salt
2/3 C maple syrup
1/3 C canola oil 
1.5 T vanilla

Preheat oven to 325. Line a muffin tin with a dozen standard liners. Whisk soy milk with vinegar and let stand for a couple of minutes. Add canola oil, maple syrup and vanilla to mixing bowl and mix. Add dry ingredients and mix until well combined. Scoop batter into liners about 2/3 full. Bake for about 21 minutes. Remove from oven and cool on racks.

Mofo Case #13 Cats and Stats and Questions for Vegans

If you have been following the case since the beginning of MoFo, you would know that GiGi had been missing from this blog since January 2013. 
She continued to go missing from the initial Mofo list of bloggers. We are not sure if the latter was premeditated. 
This Sunday's Press conference with GiGi's family lawyer was the first time GiGi's husband stepped forward.
Jerry, GiGi's son made a plea and then made calzones.
Many have investigated the case of GiGi the missing blogger.
Detective Columbo questioned the chili that was made without ketchup.
Detective Lenny Briscoe ate blintzes. We found out that Miss Marple downs tea like a lush and Aunt Bee is well, basically an idiot.

We at GiGi headquarters dug a little harder to find clues that could be applicable to GiGi's whereabouts. We realized her peculiarities would probably apply to other vegans you might know or maybe have not seen for awhile. Please help us with these multiple choice answers.
