MoFo 5 Veganizing Martha

October 5th. Thank God October 4th is over. Before we get to veganizing Martha today, I gotta come clean here. This has been weighing heavily on me. I have a confession, two actually. Two confessions.
Confession 1-  I don't do yoga. At all. Unless lying on the couch in a fetal position is a yoga pose. There probably is something called Fetal couch yoga but I don't know since I don't do yoga. I think I could like the shvitzing part of Bikram yoga. I'm used to ovens. Sylvia Plath probably should have tried Bikram yoga a couple of times instead of using her oven.

Confession 2-  I hate nature and the great outdoors. What's so great about it? Being bitten alive by things buzzing around your head in a swamp is not a fun time. And I have never camped. Ever and never. I've heard there is no room service for tents. I know these confessions are un-vegan of me, please believe me when I say...
I am an ethical vegan for health reasons. I'm glad I told you. Phew.
GiGi: Oh look who's here.

GiGi: Come on in Martha.
GiGi: Shit. Sorry wrong Martha. How is George these days? See ya.
GiGi: Oh good you're here.

Martha S: Thanks for having me, GiGi.
GiGi: You are very welcome. Thank you! It's a good thing. You always say, "it's a good thing", ha ha, right Martha?
Martha: Yes, I always do say "it's a good thing", GiGi. What are we making today GiGi?
GiGi: We're making Chocolate Glazed Gingerbread Cakes.
Martha: Oh it's a good thing. From my Martha Stewart Baking Handbook.
GiGi: Hahahaha Martha. Yes you wrote that recipe before you did time in the big house. Not a good thing, Martha.
Martha: Had I not done time we might not have met GiGi.
GiGi: Yeah... well right Martha uh, let me give the folks at home a list of ingredients here.
5 T Earth Balance
Martha: Earth Balance?
GiGi: Yes Martha. It's a vegan butter so to speak.
Martha: What's wrong with organic home churned butter?
GiGi: Come on Marty. Mind if I call you Marty, Martha? Certainly Marty, you are aware of how exploited the animals are..
Martha: But it's a good thing.
GiGi: What?! Let's move on to the recipe.
1.5 C organic unbleached flour
1 tsp baking soda
2/3 C boiling water
1 tsp baking powder
2 tsp ground ginger
3/4 tsp tsp cinnamon
1/2 tsp allspice
1/2 C packed brown sugar
2/3 C unsulphered molasses
1 tsp ground flax seed made into a slurry with 3 T water
Ganache and crystallized ginger.

Martha: Where is that organic egg?
GiGi: Marty, you came here to veganize. I used groudn flax seed instead of an egg. I don't want to proselytize, but I happen know what happened to the chicken who laid that organic egg last time you had the flu.
Martha: Farm raised organic chickens make the best soups, GiGi.
GiGi: Oh God help me.Preheat oven to 350 degrees. You can take it from here Marty.
Martha: Generously butter...or Earth Balance and flour a 6 Cup jumbo cupcake pan, tapping out excess flour. In a small bowl, (perhaps an heirloom), stir together baking soda and boiling water. Set aside. In a medium bowl, (perhaps one you've bought at a country store), sift together flour, baking powder and spices. Set aside.
In bowl of electric mixer with a paddle attachment, beat butt, I mean Earth Balance with brown sugar until light and fluffy.
GiGi: Awww. Fluffy I had a cat named Fluffy. Now add the flax seed slurry. Beat well. Add molasses, fresh ginger and reserved baking soda until well combined. Divvy up the batter amongst the prepared muffin pan, filling each about 1/2 way. Bake about 25 minutes rotating halfway. Transfer to wire rack and cool for 15 minutes.
Martha: Invert cakes onto rack to cool completely. Here's an interesting thing GiGi. I came up with this recipe while practicing my daily yoga inversion headstand. I glanced at a rack of marmalade muffins and thought wouldn't it be priceless if they were actually upside down cupcakes.
GiGi: And here I thought I would have to pour ganache over them while standing on my head.
Martha: See GiGi, yoga. It's a good thing.
GiGi: Well thanks for stopping by Martha.
Martha: You are welcome. Thanks for having me.
GiGi: Yeah. Yeah.
Hey I didn't forget about the ganache. Martha had to leave to go camping.

Ganache
1/3 C vegan chocolate chips
1/3 C coconut milk or soy creamer
2 T agave

Boil coconut milk in heavy saucepan. Add vegan chocolate chips and agave and stir until melted and ganachey. After the cupcakes have cooled, line a cookie sheet with parchment paper and place cupcakes, (still on wire rack), above it. Drip about 1 T of ganache over each cupcake. Let ganache run down sides.  Refrigerate until set.

Hey I wonder who else will stop by to help me cook this week. Who do you want to help in your kitchen? Thanks for stopping by. Off the record...do you camp or do yoga?

Yay For Veganville

It's been a week without a bloggie and a week without a bloggie makes one weak. Bahaha. Wait don't go yet. I need to reach a 100 followers very soon. We've been very busy here in Veganville. We've gotten two new awesome local accounts and are burgeoning here in the Bay Area. We are so excited about this. Money is always good but making quality scrumptious vegan food readily available for the masses is even better. Better for the animals, better for the earth, and better for the body. I'll give you specifics and locations real soon.
I'll be trying out two new muffins in the test kitch this week too, but alas have no new pics to share so I think I will shhhh mum's the word, surreptitiously swipe a very pretty picture from another blog.

Ooooh look what I found- a picture of a Veganville Sampler here at this great blog. The picture is so good because it's taken by Imelda A.K.A. Sunset Shutterbug. You can find her awesome photos on Etsy. Of course I'm partial to her cupcake with sprinkles pic. Hey Thanx for the shout out Shutterbug! I needed a picture.

Happy Birthday Cupcake For Mommy

They say it's my mommy's birthday. Every year my mommy says, "didn't I tell you and your sister not to get me anything?" One reason my mommy doesn't want anything is because she stopped counting birthdays.

She doesn't want my sister to get her anything because my sister's perpetually broke and getting my mom a present would mean just hitting my mom up for more money later which really kind of means that in the long run my mom bought herself the present. This does not at all indicate that my sister is ungenerous or slothful or frivolous. Her Dickensian story is for another day. (this is what I call a cyclical gift-not to be confused with the diabolical "re- gift")

Did you ever receive a re- gift? I did. From a wealthy cheapo. Mrs. Scrooge didn't even have the decency to re- wrap the crappy gift they didn't want. They gave it to me with the original paper hanging off. Yuk. I mean why splurge on a piece of scotch tape.

The most prevalent reason my mom doesn't want anything is because many birthdays ago and one particularly auspicious April 17th my mom went into labor and gave birth to a 2.75 pound preemie...Me! (April 18th)

Now isn't that the best gift ever? Happy Birthday, Mommy.

The Activist and the Cupcake

I know. I know I've been missing in action here. Do you even know I haven't been here? It's been a whole week. Lately when I'm not working, I'm sleeping or trying to wrap my head around global catastrophe. I pray a lot. For Japan of course. Other countries. Sarah Palin's soul. I want to do something. I know I will. Throwing a few bucks at the tsunami relief fund seems trite. I started to set up a product with donation proceeds on my Etsy page and I took it down.  I didn't want to jump right into this now and then forget about this disaster up the road when this will take years maybe decades to rebuild a country and people's lives.
I was at a party about a month ago. I had catered the dessert and knew very few people there. I was also an inconspicuous guest. I was wiped and took up space on the couch. This woman sat next to me. She fondled a cupcake, and held it up to her friend across the room and Soto vocce "these are the best cupcakes I've ever had." Her friend pointed to me and said, there's the baker. The woman introduced herself to me and covered her heart with her hands and praised my almighty cupcakes. The woman and I chatted and she told me she was an international peace activist. Like right up there with the Dalai Lama. Really. We discussed world events, or rather she did.
I interjected very astute opinions like, "Oh what a bloodbath!" I think I said that several times.  "Oh what a blood bath!"And "Yep, it's a good thing that guy in the Middle East stepped down." or "it could have been another blood bath." Feel free to use the blood bath retort at your next party. It's a great icebreaker.
Believe it or not the international activist thought this was a very good point, and then she got up to get another cupcake.
As I gathered my trays to leave several Buddhist guests were gathered at the cupcake shrine. They placed there hand over their hearts and nodded their heads in reverence.
"You are doing a great service to mankind".
Humbled and grateful, I answered in my best Brooklyn accent.
"Go on... get outta here."

So I'm not sure what I can do about anything except show up, do the next right thing and more will be revealed. In the meantime, here's some comfort food pics. Wishing you all peace.

MoFo 18 Desserts Only

MoFo 18 and today I'm gonna hit you with some trivia that might not be so trivial. And even though you might think you already know everything there is about the universe, Mr. and Mizz MoFo Weisenheimer, maybe you don't know this. Hmmmph. Remember when you were just a wee bit of a thing and you learned how to differentiate between "dessert" and "desert." My mommy taught me that the way I could remember dessert has two esses is because I'd prefer two dessert over two deserts, (with one "s"), I mean who wants to rot in the hot barren dry sun more than once.
Now that we got that out of the way. Betcha thought that the expression "Just Desserts" means here's hoping that someone would receive a sweet after dinner course.
Nope. The expression "Just Desserts" is actually a misspelling of the idiom, "Just deserts" and means just the opposite. I hope he gets his "just deserts", means I hope that bum winds up in a barren wasteland.

Today's blog is just desserts from this week which means none of the above. It means "only" desserts.

Cherry Bomb

I dig doing Vegan cooking classes, "Tofu Tuesdays" and "Koffee Klotches", here at Veganville. A Koffee Klotch or Coffee Klatch is defined as a gabfest with coffee. We add lots of laughs, cool  tunes and of course dessert making. I also like to provide the Klotch with a salad and some crusty bread. I do this not because I'm so beatific, but mostly because I don't want anyone in the Klotch to go into a diabetic coma. Suing is not nice.
Last Friday's Klotch whipped up some PB/Chocolate goodies and the very awesome Lauren and Jeff requested a cherry dessert as well.
I considered Dried Cherry and Chocolate Oatmeal Cookies. I thought about very Cherry Cobbler, or an Autumnal Crumble or Slump. My earlier class made a Pineapple - Cherry Kugal, (not to be confused with Kegal), that wowed us. Yes, Kegals might wow some people but this is not that kind of cooking class. Anyway none of those seemed to jive with the PB/Chocolate desserts. And then at the 11th hour I hit upon this...
"The Cherry Bomb", called thus because all the flavors just explode in your mouth, and of course a nod goes out to the Queen of Rock and sister in Veganhood - Joan Jett.

Cherry Bomb

The following cupcake part is from the Isa Chandra Moscowitz and Terry Hope Romero's book "Veganomicon".

Veganomicon: The Ultimate Vegan Cookbook
Except I'm so smart I changed  the raspberry jam to cherry jam...but that's just the beginning.
For the Cherry Donut Cupcake you'll need...
1 C rice milk
1tsp apple cider vinegar
2 T cornstarch
1.5 C unbleached flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground nutmeg or pumpkin spice
3/4 C plus 2 T granulated sugar
2 tsp non - alcoholic vanilla
a little more than 1/3 C black cherry preserves

Let's make the cupcakes for the Cherry Bomb Parfait first. Preheat oven to 350 degrees. Pour rice milk and vinegar and cornstarch into a measuring cup and set aside. Line 12 cup muffin pan with cupcake liners.
In large mixing bowl sift together flour, baking powder, baking soda and pumpkin spice. Create a well in the center of the flour mixture. Add oil, sugar and vanilla. Stir until well combined. Fill cupcake liners about 3/4's full with the batter. Place a heaping spoon of cherry jam on the center of each cupcake. You don't have to press it down. It'll sink down when baking . Bake for 21 - 23 minutes. Remove from oven and cool on rack for a little bit. Remember to take the cupcake out of the liner before you plop it into your parfait glass.

For the remainder of the bomb, (I bet I'll have some interesting new readers today because of today's bomb making.)

1-11/2 C cherry pie filling
4 scoops of your favorite Vegan vanilla ice cream

Crumble Topping
1/2 C flour
1/2 C brown sugar
1tsp cinnamon
1/2 tsp pumpkin spice
1/2 tsp nutmeg
1/4 C canola oil + 2 T

Mix dry ingredients then drizzle oil in and crumble with your very super clean fingers until you make crumbs.

Line up your parfait glasses. Place a cupcake on the bottom of parfait glass, cover with a layer of cherry pie filling, then a layer of of crumble, layer again and top with a scoop of Vegan ice cream. We used Vanilla Rice Dream. This recipe rocks...seriously.

Make This Before the Season Is Over!!!

Hi! Come here often? Well even if this is your first time here-even if you've never used one of Veganville's recipes- even if you're scared to let go and veganize and came here because you got lost, don't go yet. Really. Stay put. This is the one recipe that cannot wait for you to think about going to your local Farmer's Market or feel your way into the kitchen. We made this in my Veganville class yesterday. We ate  every last crumb of it.  If I could eat this dessert for breakfast ,brunch, lunch, supper, dinner and a midnight snack, yeah I would be a pig, but Ooohhh it is so worth it. It is the orgasmic treat of the season and you gotta hurry because fresh blueberries won't be here forever.

Okay gang get your goblets, or parfait glasses ready... and Here it is...
Blueberry Cupcake Parfait

Agave Maple Cupcake Part (Makes 12 Standard)

2/3 C Vanilla Rice milk
1/2 tsp apple cider vinegar
2/3 C agave
1/3 C canola oil
1.5 tsp non-alcoholic vanilla
1 tsp maple flavoring
1 1/3 C unbleached flour
3/4 tsp baking powder
1/2 tsp baking soda
1/8 tsp sea salt

1.Line cupcake pan with cupcake liners and Preheat oven to 325 degrees.
2.Mix the rice milk and apple cider vinegar in a large bowl and allow to sit for a few minutes to curdle and then whisk again. Beat in agave, oil, vanilla and maple flavoring. Sift in flour baking powder and baking soda. Fill liners 2/3's full. (Use an ice cream scoop it's easy) Bake 20-22 minutes until toothpick inserted comes out clean. Cool on rack.

1 box of blueberries, (it's really called a clam of blueberries but there's nothing fishy about it)
3/4 can lite coconut milk
2 T brown sugar per parfait

Line up your parfait glasses or goblets. We used three goblets.Take the cupcakes out of their wrappers. (eating paper might lessen the carbon footprint- but it's not that tasty) Place one cupcake on the bottom of each goblet. Layer each cupcake completely with your fresh blueberries. Pour coconut milk over that layer, then go ahead do up that layer thing again...cupcake, blueberries, coconut milk, ending with some blueberries. Sprinkle 2 T brown sugar over the top of each parfait. Refrigerate at least 35 minutes. Sending you blueberry kisses.

I Bet You'll Love These Cupcakes

I never learned to play Go Fish, or Old Maid. My dad taught us black jack and "pisha pasha" the Yiddish name for the card game War. As a child I read the dictionary and played massive amounts of ping pong so by the time I was ten it was only natural that I utilize those talents by betting on 21 games, and throwing spelling bees.
Granted, I was never a girl scout or a brownie but when troupe 753 was going to a dude ranch for a weekend they asked 11 year old GiGi to go. Yee haw! My parents gave me some money and I guess they expected me to ride them there horsies and breathe some country air. I never saw the light of day and lost all their money playing pinball and betting on knock hockey - there was no ping pong - or else I would have come home with Mom and Dad's next mortgage payment.
My uncle J.  a Harvard grad, did time in Sing Sing for embezzling. My great grandmother baked lemon meringue pies for the customers in my great grandfather's gambling house. My sisters ex-husbands, and fiancees have been hunted down by bookies and bookies have called her home to ask if she wanted to bet in tandem with her beaus. My one husband wound up tens of thousands of dollars in debt spending money and betting on jobs that never materialized. 24 years ago I quit smoking 2.5 packs a day on a bet. I'll look the other way when we drive by the stinky dilapidated San Pablo Bingo parlor. It's just too enticing. I always liked the B-52s. I bet you didn't know that Swedish Fish were vegan! Go fish!

These are uber kid friendly and great for summer fun!
And yep I pinkie bet you can't eat just one.
Please don't jump ship after that ridiculous poem.

Make your standard Vegan Vanilla cupcake. Reach into the Veganville archives and you'll find one. Pour the batter into navy or some sort of blue hue cupcake liner.

Frosting and Decorating
1 Stick of Earth Balance (room temp)
2 T vegan shortening
3.5 C  confectioner's sugar
1 T-1/4 C of rice milk, or soy or hemp or almond
1 1/2 tsp non- alcoholic vanilla or flavoring of your choice
3- 5 drops blue food coloring

several toothpicks or a thin knife
Swedish Fish, of course

Cream the Earth Balance and the shortening together until fluffy. Add the confectioner's sugar and beat for about 3 minutes. Add rice milk, and flavoring and beat another 5-7 minutes until fluffy. Remove bowl from stand, or mixer from bowl.
With a toothpick take a small amount of coloring and swirl it into the frosting. Trust me a small amount takes you a long way. Throw out the toothpick and use a spoon to mix the color into the frosting until thoroughly combined. If you want a deeper blue, repeat the process using a fresh toothpick each time. Do not, I repeat do not, frost a warm cupcake or cake for that matter EVER. Wait until the cupcakes are cool.
Frost and top with 1 Swedish fishy per cupcake. Bingo! It's a winner. They are perfect to eat while hanging with your toothless pals at OTB. Just saying.

Paris is Burning

It's Valentine's Day. Love it, loathe it or skip over it. For me, since holidays mean prospective clients, opportunities to whip up new enthralling creations, and loads of gelt coming my way, I should be yelling, "yippeekayay it's a holiday".
Feh, I say. I can have the same stupid expectations of my business that I've had with a bad lover. That's not to say business is bad or cheesy, but expectations always are. The old adage says, "expectations are like resentments waiting to happen." It seems that every holiday ten clients crawl out of the woodwork and FB me about all the goodies they are going to order, and "can I have special this, and special that,GiGi?". They wind up not ordering and then they hide from my FB wall until the next holiday with order "promises". Of course I have wonderful customers too, but like a typical codependent I expect a lot from non-ordering customers. All these expectations
just reminds me of Paris.
Once upon a time there was this guy I was not that crazy about,(read A.H.) but who I was certain was going to take me to Paris (why else would I have slept with him?) I mean c'mon. All that moaning and sweating and "I see Paris, I see France, I see GiGi's... well you know". So I wasted all this freakin precious time, for what? Oh it seemed so promising too but, a Mets game and a takeout pizza?! Expectations are not pretty, my friend.
This Valentine's Day my man done good. Thank you honey, but just in case Marcia and I devised a special cupcake box. This box is for anybody who has ever known disappointment, anyone who has lived through dead flowers from the street merchant, cheap drugstore candy, imaginary excursions, 12 freaking innings, cold pizza, a voodoo doll or a "I hate that muther" vegan ice cream hangover. The special "I Hate Valentine's Day" cupcake box is just for you. Don't say you aren't loved. xoxoxo

Nuthin Butter Cupcakes

I was all psyched to make Ricemellow filled cupcakes that are of course pony safe. No horsing around for this girl Yuk Yuk. I'm totally bummed that two local health food stores no longer carry one of my favorite confections and that I would have to mail order it, and that would take oodles of time. These little nuthin butters just couldn't wait. Since necessity is the mother of invention, I decided to concoct my own marshmallow type thing.

Remember fluffernutter- peanut butter sandwiches, don't you? Well this is my vegan friendly cupcake tribute to that white bread wonder.
Enjoy!

The filling
1 12 0z.silken tofu (in the box)
1/4 Cup canola oil
1/3 cup agave (or maple syrup)
1 T non-dairy milk (I use vanilla rice milk)
1.5 tsp vanilla (I use non-alcoholic)
1 ripe banana sliced (optional)_
Blend all ingredients except banana in food processor or blender.Blend about a minute then add banana blend again 'til smooth. Refrigerate for a couple to several hours.
This filling rocks as a pudding too, so if you don't feel like making the whole shabang this pudding stands alone.

Make the cupcakes.
2/3 cup rice milk
1/2 tsp. apple cider vinegar
2/3cup agave syrup
1/3C canola oil
2 teaspoons vanilla
1 1/3 cup unbleached flour
3/4tsp baking powder
1/2 tsp baking soda
pinch of sea salt

Line cupcake pan with liners and preheat oven to 325 degrees. Whisk rice milk and apple cider vinegar in large bowl and allow it to sit for a couple of minutes. If it looks curlded that's okay! Beat in agave, oil and vanilla. Sift in baking powder, baking soda, and pinch of salt. Fill liners about 2/3 full. Bake 20-22 minutes until toothpick comes out clean. Don't overbake. Cool on rack for about an hour before frosting or filling.

The following recipe is from "Vegan Cupcakes Take Over the World" By Isa Chandra Moskowitz and Terry Hope Romero. I wuv these Brooklyn girls!

Peanut butter OMG frosting (I added the OMG...aren't I clever?)
1/4 cup earth balance margarine softened
2 tablespoons vegan shortening
1/2 cup creamy peanut butter
1 1/2 teaspoons vanilla
1 1/4 Cups confectioners sugar
1-2 T rice, or soy milk

Cream together margarine and shortening with hand mixer til smooth. Add peanut butter and vanilla and beat another 2-3 minutes. Beat in sugar and dribble in rice milk, beating til frosting is a pale tan. Beat continuously until frosting is very fluffy.

Assemblage...the filling Option 1

Here's the fun part... because it leads up to eating. If you are decent with a pastry bag you don't have to be a whiz... fill your pastry bag about a 1/4 way with the filling. Put pastry bag down, and take a very clean index finger and poke a hole in the top of each cupcake. Pick up the pastry bag now and place the tip down into the cupcake and fill.
The Filling Option 2...What are you crazy GiGi??? A pastry bag? hahaha.
Don't worry your little head.
Cut the freakin top off the cupcake then- you great big scaredy pants. Now spoon a dollop onto the cupcake and gently place the top of the cupcake back on.No need to shvitz.

Frosting
Take a spatula and frost those babies.
The peanut butter frosting was so goood...my camera ate it.

Blame it on Meditation

Sometime in January
After a month of old man coughing fits, hives covering my right boob, a wrenched back and a whirlwind visit to Los Angeles where I played a cutthroat game of Password with my geriatric parents, I meditated.
Meditation in itself is nothing new to me. I've been meditating in some shape or form for close to three decades. I used to have one of those top secret mantras I used for a while. It made me hungry and I often passed out. Too much oxygen.
I did mushrooms and meditated in my hot pink flying bird wallpapered bedroom where I was convinced I was on the top of Macchu Piccu, not my mom and dad's house in Massapequa.

Check out these nifty mushroom cupcake toppers from

http://goosegrease.etsy.com/

My dad even bought me this book called "Inner Tennis" where the author swore you could improve your overhead if you just visualized and stared at a tennis ball for 40 minutes a day. I tried it and It worked. I won a lot of matches when I wasn't doing psychedelics. Alas, those Carlos Castaneda days are long gone.
So in December amidst the spittle, the phlegm and the two bulging discs I got quiet. I asked God for direction. Just general direction, mind you. No ten commandment, no burning bushes. No no nothing that big, because I was feeling pretty lousy and quite frankly didn't feel up to moving a mountain. I was just asking and hoping for a healing meditation. Just between me and the guy upstairs, a quick connect to remind, Him (big H) I was not doing too good.

Uh God...It's uh me GiGi.
You got a quick minute? Thanks for Obama by the way.
Anyway, I feel like crap. Nothing as bad as a lepper or someone like your gal Mother Theresa might have visited, no nothing like that, but I do have to crawl to get a kleenex . Cough, cough, spittle, spittle.
and then it was like the call was dropped. I hear a rumble and a mumble. Lots of garbling. Uh are you still there? And I hear...
preat duh ceilings
What?
Prea senors (with a tilda)

My ears were pretty clogged. I took a moment and said,
Just hold on God and let me go get a q-tip. Might take a little while God, cause as you know I'm still crawling.
And just like that, I heard...
GiGi ...play the seniors. Train and play the seniors in Tennis. Blog about it. And get your crazy friend Gillette to do it with you.

Well here it is March. Maybe I didn't get all that ear wax out. Because in February God made it rain a lot. The courts were wet, and Gillette's and my finances and writing gigs were dried up.
Me and Gillette got depressed.
So I went back to the baking business.
