Mofo 6 A Happier Burger Would Make a Smarter Clown

Hospital Officials say that R. McDonald’s near death experience occurred just after 3 PM in a crosswalk just outside the famed burger joint. He was in shock but hospitalized from high blood pressure, high cholesterol, high blood sugar and fallen arches. R. McDonald’s release is slated for next week some time. Since McDonald was not hit straight on, police are no longer looking for the vehicle which swerved out of his way but ran over Mickey Dee’s happy meal. McDonald’s lawyers are not happy about this.

A Happier Burger with 1000 Island with a Punch
6 Portabellos with caps twisted off and cleaned with a damp towel (never run mushrooms under water) Marinate the twisted off caps too.
1/2 C olive oil
1/4 C  balsamic vinegar

1 tsp sea salt
Kaiser rolls
Fave vegan slaw or lettuce and tomatoes
Preheat oven at 450 degrees. W
hisk together olive oil, balsamic and sea salt. Marinate portabellos for about 1/2 hour, unless you are in a super hurry.

Bake 20 min one side; 15 min the other.


1000 Island with a Punch
1/2 Vegenaise
1/4 C your favorite vegan BBQ sauce
1 pickle (my favorite are Bubbies) chopped
shot of Tabasco

Mix ingredients together, slather on kaiser roll, add portabellos and your favorite toppings. I'm partial to slaw. What toppings would make you happy?


Now that's a Happy Meal :)

MoFo 26 Leftover Leftovers

Got any leftover leftovers? Any Tofurky lurking? Here's a shroom recipe just perfect for those links, I think. We made them for our Gratitude celebration so if we have them again they would just be leftover, leftover, leftovers and there isn't any leftover.

Stuffed Portabello with Tofurky Sausage Stuffing (see yesterday's sucky pic)
6 portabellos (patted clean-never washed) they'll become too soggy but you knew that, and destemmed
(save those stems and set aside)
4 T olive oil
2 T balsamic
sea salt to taste

Whisk oil and balsamic and sea salt in medium bowl. Gently toss shrooms to coat. Marinate for 10-30 minutes. Arrange on baking sheet round side up.

Tofurky Sausage filling

2 Tofurky Sausage links finely chopped
mushroom stems finely chopped
1/4 C breadcrumbs
2 T olive oil
2 T soy sauce
1/4 tsp paprika
1/4 tsp thyme
1/4 tsp sage
2 T unbleached flour
1-2 cloves garlic smashed and minced
1 C Daiya of your choice.
Preheat oven 400. Mix all the Tofurky ingredients in a bowl. How easy is that? Spread on baking sheet and bake for ten minutes. Remove and fill portabello caps with cooked stuffing. Top with shredded mozzarella or cheddar Daiya. Bake for 10-15 minutes.
 
Serve with your favorite sauce, gravy or aioli.
You were so good eating all your veggies that it's time for dessert. My crazy friend brought over three different kinds of vegan ice cream. That's right three different kinds of ice cream that happened to be all chocolate. Did I ever tell you that I'm not particularly fond of chocolate frozen dessert?
I must say I did have a bite of the Soy Dream PB and Fudge. And was pleasantly surprised, but did not partake in the following.
Larry and our buddy did however pair it with leftover PB frosting and highly recommend the  goofy buzz.

MoFo 24 Be Grateful Day Dinner

Did you know that mashed potatoes are not very photogenic? Especially if they are almost naked or only dressed with some whipped soy milk and Earth Balance. They look better in real life. And portabellos stuffed with brown stuffing even if they are topped with melted Daiya don't do much to liven up the white blob in the food picture either.
Can you tell that I'm leading up to a photo excuse? We all agreed that yesterday's "Be grateful Day" dinner rocked 5 stars. The photos don't do the dinner justice. Sigh. I must confess that our pictures were hurried because everything looked better in person and we couldn't wait to eat.
The spinach salad, (the most photogenic of the bunch), is tossed with balsamic vinaigrette, comice pears, dried cranberries, and pecans and is to die for. But please don't do that. Cancel Cancel. I want you to come back tomorrow so I can give you a recipe for stuffed portabellos and a little dessert.

MoFo 22 Thanksgiving Menu and Stuff

I know blogging is way different than school, but is anyone else cramming for their blog? Or downing loads of coffee and herbal no-dose to turn their daily MoFo in on time? Or is everybody whipping up 5 course dinners and giving us our daily dose of food porn?
Hmmm. There is only one way to find out. I'm going to search out the tight lipped, bad camera, too busy to budge last minute MoFoers so I can get a little dignity back. Be back in a sec.
Took me longer than expected. Sorry I got caught up reading other people's blogs. Truth is I couldn't find any MoFo slackers or even MoFo wannabes. Well there was one vegan girl named Squeeky but I think I'll cut her some slack. They don't have many vegan options in the slammer and she got tired of blogging about gruel.
Anyway, we've got our Thanksgiving meal planned. It'll be me, the hubby, two good friends and our felines.

Spinach, pear, cranberry and pecan salad with vinaigrette
Larry's famous "cream sheese" and chive biscuits
Stuffed portabello mushrooms
Horseradish mashers & carrot brown gravy

 I'm not clear on what the appetizer will be yet. We'll probably just put out some noshables. In the meantime, so we don't fill uptoo much before Thanksgiving we've been eating little plates. Let me tell you ceramic is not always easy to digest, bahahaha.
Above is an example of what I mean by a small plate. Sliced fresh fruit with tofu nuggets. The tofu is crispy on the outside and cooked just right on the inside and filled with lots of B-12 too. It's based on a recipe from "You Won't Believe it's Vegan".You Won't Believe It's Vegan!: 200 Recipes for Simple and Delicious Animal-Free Cuisine
1 block firm tofu drained and pressed and cut into cubes
1/4 C extra virgin olive oil
1 T soy sauce or tamari
1/2 C nooch
2  T 21 Salute

Preheat oven to 450 degrees. Line a baking sheet with parchment and coat with 1 T of olive oil.
Place the cubes in  a medium bowl and port the oil and soy sauce over it and toss it. Sprinkle with dry ingredients and toss again. Spread the cubes on the parchment bake 25 minutes turning once half way through baking time.
These are great in a sandwich, a salad, over grains.
And the book is a favorite of mine. See you tomorrow. Turned in on time without a moment to spare. Phew.
