MoFo 28 Video and Crazy Boy's Barley Soup Recipe

Anybody else writing up their final MoFo 2012 while wearing their Halloween costume?  As usual I shot for 31 posts and fell just short with 28 posts. I know I know I owe you a soup recipe from Psycho Boy and a parfait recipe from me. Look for Psycho Boy's recipe after the video. Hey if you are here for the Virtual Pot Luck Weclome. My entry was just before this, but do stay for the video :)

Here's the recipe Crazy Boy/Psycho Boy handed me. Please note I did not edit it. Perhaps you can now get a glimpse into PB's inner sanctum.

He calls it Crazy Boy's Famous Crazy Mushroom Barley Soup

2 C pearl barley
6 C organic hearty veggie broth
1 lb  mushrooms sliced (his word) mediumly?
spray oil
1/2 large onion sliced and diced
2 large cloves of garlic minced
1 C baby carrots chopped
1 medium yukon sliced
1 tofurky sausage sliced nice
2 tsp each dried oregano, dried, basil, dried thyme

salt and pepper to taste
more water if the soup is getting too thick.

In your soup pot spray or add oil. and saute onion, garlic tofurky, potato and carrots until a bit brown. Stir. Sprinkle on herbs. Stir. Add salt and pepper. Stir. Add veggie broth, stir and stir.
(no wonder he's stir crazy)
Bring it all to a boil then bring it Down to a gentle simmer.
Cook 40-45 minutes or until your barley is at your chewable desire.
I am a mother hen stirring the pot.
Add or don't add water for your preferred thickness.
Go crazy and enjoy your soup.

MoFo 25 Devil in the White Potato

Perhaps you think you know everything you need to know about Seitan.
Well do you know that Seitan is a voracious reader? I am. I am. Here are a few of my favorite cookbooks and books I have cooked. Of course I am the featured antagonist in all of them.

The Devil in the White Potato
Rosemary's Herby
The Exordish
Vegan With a Revengeance
Vegan Cupcakes Take Over the Netherworld

I am quite fond of existentialism and Sartre. Are you familiar with the plot of No Exit? The recipes are mostly for disaster. The characters are damned, so they are cooked for sure. Their human vanity has given them a one way ticket to hell. Hell for them is a destination with no mirrors. Ah...but that is an old hell. In recent years I have given our occupants back their mirrors. They now have a fate much worse.....

You can have your beautiful reflections back. But ...

Tonight's recipe:
Devil in the White Potato
Serves 2

2 Bakers scrubbed
1 yukon
8 crimini mushrooms sliced
1 zucchini shredded and squeezed to remove water
1/4 of an onion chopped
1 clove garlic chopped/minced
1/2 package Upton chorizo seitan
1C plain soy yogurt plus 2 T
1/2 C daiya pepper jack shreds
1 tsp paprika
sea salt to taste

Preheat oven to 425 degrees.
Place potatoes directly on oven rack and roast for 50-60 minutes or until tender and cooked through. The yukon will take about 40 minutes.
While the potatoes are baking do all the other prep. Saute mushrooms, garlic and onions and seitan for about 6 minutes, add zucchini and paprika and sea salt. Cook about 7 more minutes.
Remove  bakers from oven. Carefully slice off the top quarter of each baker and let them cool about five minutes. Scoop out the flesh of each baker and leave behind a 1/4 inch layer of potato on the inside to form a shell. Add the flesh, bahahaha, of the bakers and the yukon to a large bowl and mash. Add 2 T of soy yogurt and mix.

Raise oven temp to 475 degrees. Place the  potato shells on a foiled baking sheet. Roast in the oven for 12 minutes or until they begin to crisp.
While the potato shells are baking in the oven mix the with 1/2 C of and 1 C of soy to the zucchini mixture. Fold in the mashed potatoes.

Remove the potato shells from the oven and use a cupcake scoop to evenly fill each potato with several scoops.
These also go by the moniker, Seitan is Twice Baked!

MoFo 24 Sloth Day Friday Packaged Stuff and Sin City

Hey everybody it's Sloth Friday. Did you know that sloth is one of the 7 Deadly Sins? Since it's almost dias de los muertas we could start the party early and call today Day of the Deadly. I bet Kittee B. from Cake Maker to the Stars could even swing by with some of her menacingly beautiful sugar skulls. She's a maniac with those sparkly skulls, and she's been up to her underpants in glitter. Enough about Kittee. It's my blog.

Technically sins aren't supposed to be healthy. Even if you act out in moderation, it's not supposed to be good for you. But really, what's one more day of testing the fates?
Tonight I bring you packaged food you can slit open with a serrated knife and then cram down your throat while you eat at the kitchen sink, or in the corner under a dim light, or even partially suffocated under a non-wool Eco friendly blanket.

Oh forget it! You guys probably don't do that. Everybody has such nice kitchens and lives and, and, and...oh where did that serrated knife go? Did you know that self pity is another one of the 7 Deadly sins?

I never had the salsa hummus before and guess what? I got it for free! It's true. The cashier at WF didn't see a bar code and she and the bagger gifted me with it. Greed is another deadly sin. I thanked them profusely and then asked if they had any other freebies for me. On to the next sin.

I know, I know it is the year of the nut cheez, but hey this is grab and go. I heard somewhere that lust often masquerades as romance. Yep lust it's just another one of those deadlies. Eh. Who cares. I just love daiya sooooo much.

Rejected by a wedge of vegan cheez. Oh well it just would have been a marriage of convenience anyway. Still it pisses me off. You know what daiya? You can just Eat it!!

Sorry! Anger is another deadly sin. I think I will feel better after dessert. Crazy Boy didn't want any, and I could have eaten the whole thing by myself but that would have been gluttonous, and I think I've had enough sitting around sinning tonight. I left half for CB. He had it for breakfast and said he actually liked my raw tarts better. Not sure what that means. I think we all could use 10 Hail Merries.

MoFo 16 Sweet Potato Bowl and a Meteor

Crazy Boy aka Psycho Boy usually makes something on Wednesday nights. He went shopping for his ingredients and he even took a photo I call, "Still Life With Knife".

He had an allergy attack earlier today, slept a little and then met me on my run tonight. On our walk back from the track,Crazy Boy pointed up at the sky and said, look a meteor! Sure enough it was a beautiful star burst that we got to experience together. Crazy Boy can often see things that other people can't. He can often find the miraculous in the ordinary. I probably would have missed my first meteor if my hero had stayed home. I've probably seen a meteor before but somehow everything always seems more special with C.B.

We watched it fall from the sky and journeyed home, but again my hero was weakened by allergies. Perhaps what we witnessed was not a meteor at all, but a nugget of Krypton.

Psycho Boy tries to regain strength from warm towel.
Alas, he could not recover in time to prepare something so his sidekick took over.

Riffin' on Engine 2 Rip's Sweet Potato Bowl (changed up a bit).
Feeds one out of commission super hero and his sidekick.

2 medium sweet potatoes cubed and roasted
1 can of black beans drained and rinsed
1 red bell pepper seeded and diced
10 ounces pineapple chunks drained
1 handful of fresh spinach chopped
1 avocado pitted and diced
juice of one lime
2.5 T balsamic vinegar
1/4 tsp of pink Himalayan salt

Preheat oven to 425 degrees. Scrub and cube sweet potatoes. Line a cookie sheet with foil and spray with canola oil. Lightly spray sweet potatoes. Roast for about 25 minutes until lightly browned. Place everything in large salad bowl and toss gently.

Today:Look for the miraculous in the ordinary. Maybe wish upon a star, or be someone's super hero, you never know who's day you might brighten, just by being you.

MoFo 15 Training Tuesday Pizza?

Welcome to Mofo's Training Tuesdays, the blog where I cop to how I exercised and attempt to bring some accountability to this forum.

This past week I added a 4 mile run to the week before a paltry and embarrassing 4 mile run. I tagged on 3 miles of walking each time, but big deal. I did strength training, a load of sit ups and some aerobic activity. I am really not beating myself up here, I'm all for applauding life's little victories. Cutting myself some slack. It's when the slack becomes slackerish and the big things that get in the way of discipline get smaller and smaller, til any justification will do and workout diaries morph into this...

Monday walked around Costco and bought a super size bag of dehydrated apples.
Tuesday didn't do shit and ordered Zachary's deep dish pizza with extra Daiya. Watched the debates.
Wednesday watched all the analysts talk about the debates while finishing off gaseous dehydrated apples and cold pizza.
Thursday tummy hurt, drank ginger tea and worked up a sweat while lying in bed with two
heating pads.

I listened to the political analysts tonight and since this is a food blog, I'd like to convey to you what they said in respect to food. One analyst said that prior to Obama's first term he had promised to have root beer in all the nation's drinking fountains. Another analyst in respect to Obama's performance said, that today Obama must have eaten his Wheaties and milk, had his coffee and drank his honey boo boo juice.

If that analyst is right about Obama's breakfast of champions Obama clearly is not xgfx, vegan or even lactose intolerant. I can understand the President's coffee choices and even root beer decision. I can only guess as to what honey boo boo juice is.

My fact checkers just informed me that it is not called honey boo boo juice, but honey go go juice. Honey go go boo boo drinky-poo is a blend of Mountain Dew and Red Bull. I'll stop there.

Today's reluctant tip: We are all accountable. No matter how hard it gets, stick to healthy electrolytes, green filled smoothies, and water. Say No to Honey Boo Boo.

P.S. I will do better even though I didn't do that bad.  :)

OMoFo 14 Germanfest Shakedown

Today is Oktoberfest  Monday here at Veganville. I usually prepare a hearty German feast. Today's dream menu included a thick barley soup with a dense brown bread, a roasted beet salad with caramelized onion and a Black Forest shhhhtrrrudel. Please roll your rrrrrrs.

Then I woke up. In non-Mofo life Heimlich (that's crazy boy's German name) and I eat lots of kale salads, raw foods, rice pasta and veggies, smoothies. We exercise a lot. Heimlich's biggest calorie burning activity of late has been cleaning up the kitchen after Fraulein.

Still we were set on cooking this Shmorg-ass board for you and us, then Heimlich had this big idea about weighing in first. Tell me the truth, is anybody else's waist band expanding, and does my ass look fat in this picture?

GiGi's weigh-in

Heimlich's weigh-in

Like days of yore, Heimlich and I have decided to drink our dinner. Sans booze this time. Sure it's calorie heavy and lacking nutrients but hey so are we.

Black Forest Shakes

32 oz almond milk
10 oz of black cherry preserves
1/3 C dark cocoa powder
1/8th C dried cherries
1 C soy yogurt
2 packets of stevia
3 ice cubes

Special Equipment: 2 Steins

Mix half cherry preserves with yogurt and add to blender or your very special Vita-mix you lucky duck you. Add Almond milk and mix. Blend in cocoa powder, and remaining ingredients.

Until next time. Thanx for reading.

MoFo 13 Sundays With Seitan

Hi. It's me again, Seitan, from "Sundays With Seitan." I didn't mean to frighten you away with this video I mailed you last week. Quite frankly I think you've just been brainwashed by all the bad things you've heard about gluten. Why remember when bran was banned and spinach was contaminated, and even certain mushrooms were condemned. Why sure there are always food scares. Damned if I don't remember the botulism scare of 1862. I could have said goodbye to refrieds forever, but what's a bashed can or a bad bean every now in then when you've got all of eternity to fan those flames. Hey you. Over there. The girl with the teff, come back!

She isn't coming back, Mommy!

That's okay Zuul. That just means that there will be more food for you and Mommy. Bahahahaa. They are all scaredy cats. This is the last time I will try to seduce you all with my culinary charm.
NOT! Bahahaha.

Seitan and Roasted Eggplant Wraps with Lemon Cashew Sauce
Serves 4 hungry demons

1 eggplant peeled and sliced into rounds
canola spray
1 box Seitan strips
1 clove of garlic peeled and chopped small
sea salt
1 English cucumber peeled and diced
2 vine ripened tomatoes chopped
1 Kosher pickled diced
4 spinach wraps

Lemon Cashew Dressing

3/4 C raw cashews
3/4 C tahini
juice of one lemon
1 C water
1/2 tsp dill
1/2 tsp salt
1 clove garlic chopped

Spray skillet and cook seitan strips with 1 clove garlic according to package directions. Preheat oven to 400 degrees, line a cookie sheet with foil and spray. Place eggplant slices on cookie sheet and spray eggplant again with canola oil. Cook for about 12-15 minutes.

Meanwhile place cukes, tomatoes and pickles in bowl and make dressing.

Place cashews in bowl of food processor and process until crumbly. Add tahini, lemon and remainder of ingredients. Process until smooth. Salt and dill to taste. A little dressing can be tossed into the cuke mix or drizzled over the wrap.

Assemble the wrap:

Place wraps vertically on clean surface. Layer with seitan, eggplant, tomato mixture, and drizzle cashew dill dressing. Roll and slice in half.

You take the top wrap Zuul.

Please join us next time for Sundays with Seitan. Don't make me come up there and get you. Please don't make me leave the confines of my home. It's way too cold up there where you are and you know that we hardly ever have a cold day in hell.

Ta ta. That's a wrap.

MoFo 6 Just Dessert Saturday Raw Footage Mixed Berry Pie

When I signed up for my third MoFo this year, I imagined that all the big MoFo guns and blogger big wigs would be posting 7 days a week. I have never been an A-Lister, I kind of thrive as the under dog, but I wanted to be right there with those bloggers who are always featured in round ups, the bloggers who win the MoFo challenges, and the Iron Chefs, the bloggers Isa and Hope are personal friends with. Yep I wanted to be sweating it out making the deadlines and kicking MoFo ass 24-7. I dig being zombified especially when all the cool kids are doing it.

Yeah, well guess who's flailing now? And guess who was mistaken? All those smarty pants  cool kid A-Listers have taken the weekend off to regroup for next week's MoFo. They get to have spanking clean kitchens and most of all get to sleep, take-in food, spend some time with loved ones. I guess I got what I deserved... Welcome to Just Desserts Saturday!

Mixed Berry Cashew Creme Pie
Crust

3/4 C almonds
12 dates

Cake

2 C raw cashews, soaked at least an hour
Juice of 2 lemons
1 frozen banana, sliced before freezing
1 peeled, and shredded zucchini
3 packets Stevia
1 T agave
1/3 cup coconut oil, softened
1C frozen and thawed mixed berries or pitted cherries

For the crust, pulse the almonds in a food processor until finely ground, add the dates and sea salt and process until the mix sticks together when you press it. Press the mixture into an 8-inch spring-form pan and place in refrigerator while you make the filling.

Add zucchini and the rest of the cake ingredients except the coconut oil and the strawberries to food processor. Mix the ingredients, and while it's running slowly pour the melted coconut oil in and process until the mixture is creamy.

Take the spring-form pan out of the fridge and pour about 1/2 – 2/3 of the mixture into the pan. Smooth it out and put it back in the fridge. Take the remaining cake mixture and process it with the 1 cup of mixed berries until smooth. Carefully pour this mixture into the crust pan and spread until even, try not to mix the layers, if I had a better pic you would be able to see the nifty layers. Freeze for about 45 minutes. Let cake sit for a few minutes before cutting. I made a compote.

Compote
about 3/4 mixed berries
1/4 C water
1 T cornstarch
2 packets Stevia + 2 T agave

Place 1/2 the berries in a sauce pan. Add 1/8th C water and sweetener. Heat to boil. In a separate cup mix 1/8th of C cold water with cornstarch. Add to hot liquid and simmer about 6-8 minutes. Stir often.

I also think it would be quite tasty with frozen vegan yogurt  if you are in the mood for berry-berry ;)

Please commiserate if you too are posting today :)Look forward to cooking with you.

Friday MoFo 5 Sloth Day Pizza

It's Friday and that means it's Sloth Day here at Veganville.
There are two kinds of sloth. The human kind and the animal kind.

The human sloth is:
a lover of sleep, couches, e-z boys, fuzzy slippers, high octane coffee, and early retirement and packaged foods. 47% of Americans who cannot afford health insurance have been referred to as sloths.

The animal sloth is:
so lazy that he cannot get up off his South American tree or ass. He is often two toed from losing his other toes to diabetes, since he could never afford his own health care. He grows algae all over his fur, because he is too lazy to shed. He has never voted in an election because he is two lazy to register.

By virtue of toes and voter registration I fall into the first category. Today we make gluten -free pizza crust from a package we found in a chain store. We shop at TJ Maxx for food props, and found this on the shelf. Vegan and GF! Why not?

We found it easy to make and spread out on the cookie sheet. We had some basil and vine ripened tomatoes in the frig, along with some Daiya. Just tore, sliced and sprinkled the ingredients. We added some nooch and a little oregano.
We thought it would taste like a flat bread, but we were really pleasantly surprised. After slicing the pie we realized the crust was indeed crusty as crusty crusts should be, and the rest of the slice was unsoggy and yet we could fold it like a New York pizza slice. This made these two New Yorkers very happy. I will definitely make it again, um maybe after another snooze.
We are super stoked about this crust.
Thanx for stopping by and remember to vote ;)

Crazy Boy Cooks Bavarian Crosses and Bloody Root Beers

My creative mommy didn't sew. Instead she pinned and masking taped our Halloween costumes. I believe my mom wanted to pin my sister Heidi and I into different entities, and dreamed of using the masking tape for something other than a hem. I was Clyde one year complete with M-16  and Heidi was the bereted, Bonnie with a Tommy gun. When I was nine my mom asked me what I would like to be for Halloween. I know. I would like to be a half woman-half man. You know, half my face will be like a Ladies face, the other half will be like a Man's and I'll wear half a dress, half pants. Even creative mommy did not go for this. Instead I was allowed to go as Morticia Addams. This was satisfactory. About the same time I decided to redecorate my bedroom. I covered a table with a plush fringed table cloth and put my yes, no, maybe 8 ball shaker on top. My new decorating skills worried my mother. I cut out photos I liked from a glossy magazine and taped them all over my bedroom walls. I did not realize the pictures were from a photo essay on a Satanic cult. In a round about way this brings me to today's theme and the psycho boy I married. Bahahahahaha. As my mommy used to say, To every coffin there's a lid.

Today is Wednesday and Crazy Boy Cooks
Crazy Boy Graces an Album Cover called "Handsome Devils"
Bavarian Pretzels Crosses and Bloody Root Beers
1T vegan sugar
3 C warm H2O
1 packet active yeast
1 tsp sea salt
3 C spelt flour
2 T Himalaya Salt
2 T Gomasio
2 T baking soda
2 T canola oil

Line 2 cookie pans with parchment.
Stir sugar into 1 C of the warm water.  Add yeast and let dissolve, whisk and let sit for ten minutes. It should foam after ten minutes. If it does not that means your yeast is dead as a door knob. Get a new one. Throw away the dead!!
Combine flour, sea salt and oil in in a large mixing bowl. Add yeast mix and mix until well combined. Knead for about ten minutes. Form into a ball.If it's too wet add more flour. Place dough into lightly oiled bowl, cover with plastic wrap and damp towel and let sit for about two hours in a warm draft free spot. Hell is always a good place to make bread. Let sit until the dough doubles in size.
Divide dough into 12 pieces. Roll into balls. Place on parchment and let sit for ten minutes.
Preheat oven to 400 degrees.

Roll each ball into 16 inches and make into fun diabolical things. In a big bowl dissolve the baking soda with water. Brush dough with water baking soda mix and and some real or fake blood.
Bake until golden brown. 15-20 minutes
Enjoy with red colored root beer and vegan ice creme mixed in a mason jar.

Are you sure you can't stay for dessert? Bahahahahah.

Raw Balls, and Core Balls, and Ball Balls

My strength training has improved, and I have increased sit ups and jumping jacks, and stretching. I was a little concerned about doing jumping jacks when I first began this training plan. I was afraid it would jar my back, so naturally I took it easy, so when I started I just waved my arms back and forth. Nobody waved back. I have now incorporated the jump part and yesterday I reached 75  jumping jacks during interval training with weights and core ball. I think nobody waves back because I workout alone. I really should use the mirror. I am up to 100 sit ups too. Now I can eat sitting up too.

I am back to running five miles pretty regularly. I tag on the additional three mile walk and the most I did last week was five miles with a three and half mile walk. I know I have improved my speed, not from timing my run but by picking up my speed on the straight away at the track. I feel pretty good about that.

Workouts help alleviate depression. As much as I try to visualize positive outcomes and improved body image, I still get funky thoughts. Yesterday while using the core ball, I pictured Peter Sellers in the Pink Panther movie, "A Shot in the Dark". You know the one   where Inspector Clouseau investigates a nudist colony.

Sure, Peter Sellers was in great shape from swimming, and I have the same glasses,  but why would I visualize Inspector Clouseau during a core ball workout? I have no idea.

My friend Darcy is doing the Insanity workout. She usually whips up a kale smoothie with some Vega Powder in it after her insane workout. Darcy gave me some powder to try out, I mean um Vega Plain Protein to try out and I also bought a small pack of the chai flavored Vega to sample. I found that I had less cramping and felt stronger after a workout and I really like it in a vanilla strawberry smoothie. Vega is kind of costly and for the first time in a  long while I am busted so it's not in my spending plan, unless Vega comes in Ramen flavor.

I also made some raw Vega Power Balls which are great for breakfast or even Halloween.

Vega Power Balls
3 T coconut creme whipped first
1.5 T coconut oil softened
1 C raw walnuts
1/4 C your favorite flavor Vega Protein or vegan protein powder
1.5 C dates
3/4 C unsweetened shredded coconut

Whip very, very cold coconut creme (milk) into a whipped creme. Add the creme, dates, coconut oil and Vega to food processor.
Process until mixture is well combined and creme and oil are fully blended.
Add in the coconut and blend until consistency is doughy and can form into balls.
Blend in the walnuts.
Using a small scoop, scoop the dough and roll into balls. You can refrigerate, freeze or chow down on these room temperature.

And speaking of room temperature, it's getting chilly out here. Oh come on just share these balls with your favorite nudist or athlete.

Tip for today:
I am a pretty slow runner. Lots of times I find that other runners pass me on the track. Normally I could let this upset me, but lately I have realized a lot of the people who pass me stop running after a mile or two and I run more for endurance.
Tip: Don't compare your insides to someone else's outsides. We each have our own path.

What's your commitment for today?

Here we are again. Mofo 2012 is here, that's right. It's Veganville's third year to participate in this year's biggest international weight lifting competition. Oh sorry, I mixed up my international weight lifting and curling blog with my vegan food blog.

I'm back and less confused. You probably didn't need to see my before and after pics either.
Anyway, MoFo is month of Vegan food, where frenzied bloggers from all over the globe get chubby and tired from all the food they make and eat. Last year our theme was water so we didn't gain much. This year we are excited about our theme(s).
