MoFo 27 Training Tuesday Parfait Love

MoFo count down. Anybody still here? It's my last Training Tuesday of Mofo. I got so tired of hearing myself bitch and moan about my low running mileage week after week that I pounded the pavement this week. Yay! Psycho boy must have even felt bad for me because he went out and found a new running trail for me and clocked the mileage even. How sweet is that?! I ran 5 miles today and 5 miles the other day, and also put in a 4 mile run on the new trail. I've increased my sit ups, and did strength and cardio training too. I'm back in the saddle again. Progress not perfection is always a good thing to remember.
Running was a necessity after whipping up and devouring this dessert doozy.



I tell you that dessert is a many splendid layered thing. After today's run I hope I have the stamina to write out the recipe. The pudding contains chia seed and flax seed and is perfect for after a workout. Hey speaking of workouts, I know I promised you an exercise video. Remember I promised to show you how to run the lines. I finally came through. ;) Most public tennis courts are empty mid day or late morning and this is a great exercise to do on a tennis court to get you moving. I recently heard an interview with the singer Pink, and when she was asked about how she lost her pregnancy weight she said that running short sprints was what cracked the metabolic code. And if you didn't already know it, yes Pink is a vegan too!


I hope I can sleep after those magic chia seeds. Zzzz. I now owe you one Psycho Boy soup recipe and one Magic Chia Parfait recipe. Tomorrow, I promise. Thanks for um swinging by.

June Recap In August, Pride and Loaves

I had no intention of blogging today. Yeah, what else is new? You might say. And I would say, shut up, but with an unmean inflection. I came here to look up one of my recipes, and realized, it's been a while. June seemed so promising, then July came and went, just like a few of my followers. Yep I lost followers even after I was granted not one, not two, but three Loveliest Blogger Awards!!! Maybe the award givers left. No, I still see Cadry's face in the follower section. That's a good sign. Thank you, Cadry. You are very lovely too.
Thank you Richa, and thank you Meg-Chickpea. Are you guys still on board? So who jumped ship, anyway?  I guess a jump is better than a mutiny with a box cutter.


I know that there are virtual love fest inspirational blogs out there. Don't pretend you don't know what I mean. You know those blogs with a million followers? Don't pretend you don't. I'm talking about those saccharine blogs where every follower comment goes something like this,  "I love your blog so much. Thank you for your beautiful inner cookie child quote today. If it weren't for you I would have killed myself with glutenous flour. You saved my sucky life with your Marianne Williamson-Louise Hay-Leo Buscaglia- Alchemist plagiarism." Oh Barfy Barf Barf!

Don't get me wrong. I love helping people and I've been known to use a few Cafe Gratitude quotes and affirmations myself. For the most part my blog is sprinkled with prison time and slumlord references. So upward and onward. Lets' not boohoohoo about spilled almond milk and yesterday's followers. I will not conform.

June/July recap:
GiGi delivers to out of town customer who is in town at hotel.
GiGi is very tired after the delivery and Pride Day parade, so orders Vegan pie in.
GiGi makes Waldorf pizza that crazy boy declares is best pizza ever. For Vegan Pie day.
GiGi has an impromptu ice cream party with CB, me and two buddies.
GiGi receives 3 Loveliest Blogger awards, is interviewed for two blogs, has article in Zine.
GiGi loses several followers.
GiGi starts running again, after mega hiatus. Can now outrun box cutters, and rabid boxers.

Autumnal Pumpkin Pancakes with Bob's Dread Mill

The vegan boards are in an upheaval. That's right. Apparently Bob and Mrs. Bob the retired founders of Bob's Red Mill have considered donating a hunk of money to an Oregon corporation that does animal testing. This is not good, especially since lots of vegans, me included have at least one of Bob's products in their pantry. Bob's face is even on the front of the package. We have a package of unopened Bob's Gluten Free all purpose baking flour in the cupboard. Now what should we do with this brand new bag of Bob's? Well, rationalize of course. See no evil, hear no evil...doesn't usually  work for me. However I did purchase said bag before Bob's Red Mill became Bob's Dead Mill. So after much deliberating, Crazy Boy and I decided to see what would happen if we used some of evil Bob's flour. Would we be struck down? Would we be ostracized from the vegan community? My activist friends know where we live. Would we wake up to find that our apartment had been leafleted, toilet papered and bloodstained in the middle night? Would my reveries of being a poster child for PETA end?
C'mon, please dear vegan friends, we bought this gluten free flour way before Bob and Charlee donated to the evil corporation and we besides we want pancakes for dinner.

Psycho boy googled an Engine 2 suitable pancake recipe and without reservation, tore open the Bag with his teeth, and got to work. For some crazy reason he used a waffle recipe for pancakes. Sometimes waffle and pancake recipes are interchangeable. Sometimes waffle batters are thinner. Personally I didn't want to take any chances. I was scared enough using the butcher's bag of gluten free flour. PBoy mixed the batter together and heated the pan. I hid in the closet with a crucifix and some roasted garlic.
Let me know when it's ready, I'm freaking starving, I croaked from my place of darkness.
Stop panicking it's just a bag of gluten free flour, your friends won't find out, PBoy said.
Yeah they will. They know everything there is to know about butchering. And then they'll show up with picket signs.

And then I heard it, bloodcurdling Linda Blair screams coming from the man who was once my husband.
I ran to the kitchen, stopping on the way to pick up another makeshift rosary. Actually it was two Popsicle sticks and a necklace stuck together.
What is it????
Oh these stupid pancakes have no oil in the pan because we're on this E2 Plan and they are sticking to the skillet. Damn it!
So add some more spray.
Okay.
Anything else?
NO..They're almost ready.
Good I'm starving.

I must say they were excellent pancakes, except for their obvious deformities, hence no pics.
Use this recipe at your own risk! Bahahaha.

Sideshow Punk-in Pancakes Gluten Free


11/4 Bob's Dread Mill Gluten Free Fix
2 T cornstarch
1 T ground flax seeds
2 tsp baking powder
1 tsp baking soda
1 1/4 tsp cinnamon
1/2 tsp nutmeg
1/2  tsp ginger
1/ 2 tsp allspice
1 T agave
3/4 C solid-pack canned pumpkin (not pumpkin pie filling)
11/2 C rice milk or any vegan milk thereof
2 tablespoons orange juice

 
Spray skillet with canola spray, heat pan. Mix all ingredients together. (Batter will be thick; add more liquid if you want a thinner batter.) You will need to spray skillet between batters. Proceed at your own risk. Oh stop waffling. Any thoughts on the Bob's Red Mill debacle?

MoFo 12 Veganville Voopee Pie Winner Announced!

 
That's right. The winnner of Veganville's first MoFo contest ever-ever is announced. We assigned each contestant a number and googled a high powered random generator. Through the powers that be we were led to "Psychic Science" a reliable paranormal  FREE random generator site. We typed in the numbers "Psychic Science" requested and the random generator picked a number/contest winner for us. We are thrilled to announce... drum roll please-

MoFo 11 Once Upon a Time Muffin

Once upon time there were two sleepy people who lived in a tiny little hamlet that didn't serve ham. This tiny little hamlet was named Veganville.The two sleepy people worked day and night to bring all kinds of vegan treats to neighboring cafes. On the second day of MoFo in the year of 2010 a giant who loved dogs and coffee ordered all kinds of Veganville treats, so many treats that the two sleepy people and their cats worked all day and night just to supply the giant.The people in the Land of Giants were very happy until on the 11th day of MoFo the mean muffin lady, the one with the Giant hormonal muffins came back from vacation, and the Giants from the Land of Giants remembered what they had forgotten. They remembered that the mean muffin lady's muffins were Jumbo- Jumbos and just the perfect size for Giants and their dogs. Who cared if the mean muffin lady's muffins were made with salmonella laden eggs. These babies were big unlike Veganville's muffins which in the Land of the Giants were considered 5'11" muffins or just under 6 feet. So the two sleepy people decided to do what they usually do when presented with a problem. They pronounced it Veganville nap day and took to their bed.


The 5'11" Cranberry Orange Walnut Muffin
3 C flour
1/2 T baking soda
1/2 T baking powder
2 T energee
1 T pumpkin Spice
1 C organic sugar

1/2 C canola oil
1/2 C Rice milk
1/2 C Orange Juice
2 C dried orange cranberries (or plain dried cranberry if you can't locate)
1 C chopped walnuts

Preheat oven to 350 degrees. Line 6 jumbo muffin cups with cup cake liners (or 12 standard)
Whisk dry ingredients in bowl. Mix wet ingredients in another bowl. Add dry to wet.
Bake 20 - 22 minutes. Cool on racks.
This is a perfect muffin after a snooze.
