Elvis P Pie


My friends don't invite us over to watch Project Runway anymore, not since Heidi split from Seal and Tim Gunn left. I don't miss Heidi that much, my sister's name is Heidi and that's enough. My mother named my sister after a dachshund and me after a poodle, I think. I like Tim Gunn. He wouldn't let any fur onto Project Runway and remember when he did an ad for PETA.  I read his book, he's very kind and I like his fashion advice in Marie Claire. His column is called "Gunn Laws" and he answers reader's questions. Questions like, I'm over 50 can I wear tartan jeans? I have a high forehead, would I look okay with a shaved head in a monastery?
Stuff like that. A chunky fashionista recently asked if she could wear white jeans. Tim said she could, if they weren't jeggings and as long as she wore them monochromatically. All white hmmm. I thought this would make her look like Frosty the Snowman. White all white? Really?
Oh Tim, Timmy, Timmo I can see your point with the future high forehead monk, they wear hoodies all the time anyway.
But white, all white? Lest you forget fat Elvis. Elvis' jumpsuit was equivalent to white unitard jeggings.
Elvis was more than a houndog. Sure he was jowly like a houndog and was at a very unhealthy weight. But let's be real here. Suffice it to say, Elvis was a pig! By now you are all well aquainted with the Elvis sandwich right...
Yep that infamous peanut butter and banana sandwich with bacon. Presley was renowned for his food cravings such as the Fool's Gold Loaf, a loaf of Italian bread filled with a pound of bacon, peanut butter, and grape jelly. Apparently Elvis did not stop at one sandwich either. Remember how he would sweat on stage. Don't get me wrong, I love peanut butter, and could probably eat my weight in it if we did not have an alarm on the refrigerator. But bacon. That just makes me sad. I think Elvis should have watched Fork and Knives at least once.

Here's how I would help turn the King vegan. After all I wouldn't mind being Queen for a day.
Oh yeah guess what, we're invited to a major vegan party, because I shared this very recipe at the Virtual Linky Potluck thingy.  A big shout out to Ann from a Refined Vegan and Angela of Canned Time. If I missed anybody I apologize big time :)


 
 
 Vegan Elvis Pie (serves 1 Las Vegas King) Beware of it's exravagant calories.

Chocolate Nut Crust Ingredients:

1/2 C macadamia

1/2 C peanuts or pecans

1 Cup Raw Slivered Almonds

1 C Pitted Dates

1/4 C dark Cocoa Powder

1/4 Cup Water

Peanut Butter Filling Ingredients:

3/4 C canned pumpkin (not pumpkin pie filling)

1 C Natural Peanut Butter

1/3 C Pitted Dates

3 Packets Stevia

3 T Pure Maple Syrup

Chocolate Ganache Topping Ingredients:

  
1 C Coconut Oil (not solid)

1/4 C Pure Maple Syrup

1/2 C Cocoa Powder

One sliced banana

Blend each layer separately in food processor. The crust will be dough-like, the peanut butter filling and ganache should be smooth. If you get lazy and don't want to make the filling or ganache, the crust will make great candy!! Just roll into balls or something.

Grease an 8-inch pie plate. Pour the nut crust into the pie pan and press down with your fingers.

Pour in the peanut butter layer and smooth with spatula.

Pour the Chocolate Ganache layer over the pie.

Pick up and set down your pie plate a couple times to smooth out any bubbles.

Chill for 3 hours in the freezer. Top with banana. Serve with your fave vegan ice creme.


 Enjoy! You might want to swap the white pants for a pair of sweats while eating. Just saying.

A Tale of One Ice Cream


You probably know by now that GiGi and her vegan ice cream maker didn't have much fun together during the month of October. In fact GiGi and her vegan ice cream maker were always at odds!
Sometimes GiGi was eleven, sometimes the vegan ice cream maker was 17, sometimes GiGi was 15, sometimes the vegan ice cream maker was 31. GiGi and her vegan ice cream maker never met on even ground.
GiGi and her vegan ice cream maker even disagreed about the basics.
Back and forth. Back forth. They'd yell! Almond! Rice! Almond! Rice! Almond! GiGi would get so upset she would scream, "That's enough! You know what happened to Frosty the snowman don't you? That's right just a puddle and a carrot for a nose. Don't push my buttons, Frosty!" Yes GiGi and her vegan ice cream maker bickered and they even arm wrestled!
GiGi wins match 3002!

Come November neither GiGi nor her vegan ice cream maker felt good about their relationship. Vegans shouldn't act this way. So GiGi and her vegan ice cream maker decided to meditate for their higher good.

The vegan ice cream maker opened his eyes and peeked during meditation.
And then GiGi has a divine frozen dessert moment, where she is given the answers.


GiGi and her now vegan ice cream maker friend are ecstatic about GiGi's inspiration. They are now convinced that their vegan ice cream will take over the world, (but where has GiGi heard that before...take over the world?). GiGi and her vegan ice cream maker pal must make this new recipe right away, but first GiGi has to look up this cranberry recipe from Veganomicon  she has remembered in meditation. "I'll be with you in a minute, little buddy...hey bet we can make nutty buddies too bahaha :)"

GiGi opens Veganomicon to turn to the cranberry thingy and then she sees it. OMFG! Right there in front of GiGi is a recipe, but not just any recipe and not the cranberry thingy recipe either, but GiGi's divinely inspired frozen dessert recipe. It's right there in Isa and Hope's freaking book. Did Isa Chandra Moskowitz and Terry Hope Romero the two wunderkinds of the vegan cooking world think of this recipe first? or did GiGi? or more likely did Isa and Hope invade and take over GiGi's brain??? Just like they said they would?!!! Please watch below reenactment.



Well after I run around the block and exorcise the those two ^^^, I will claim this recipe as all mine...MINE! MINE! (I'm very sorry my lawyer just phoned and I have to say it's partly their recipe, damn them)

The Recipe
This works better if all your ingredients are cold.

About 8oz silken tofu drained
1/2 C creme of coconut  milk (Isa and Terry say)  Place can in frig over night and scoop 1/2 C off top
3/4 C almond milk
3/4 C agave
1 banana (peeled of course)
3/4 C Almond butter
1 tsp almond flavoring

Add to food processor or blender and blend well. Pour into ice cream maker and follow the manufacturer's directions.

Little Miss Cuffin

If you are a dedicated follower and all around Veganville pal and admirer then you would know that we recently invented something worthy of your knowledge. That's right we here at Veganvillle like to contribute to your over all mental health and adjustment.
In a recent post we introduced the "Cuffin". If you were paying attention you would know that a Cuffin has nothing to do with fisticuffs, although they are so delicious you could probably get away with smashing a Cuffin in someones face. They might even like you for it.
Don't confuse a Cuffin with:

Q:What did one casket say to the other casket?
A: Is that you coffin?

Oh take a riccola already!

A Cuffin is not a coffin and vice versa. Yes, it's true I often eat my Cuffins in a cemetery but that's just me. I like walking after midnight. 

 A Cuffin is a cross between a muffin and a cupcake. Get it?? Bahahaha. 

Check out our new Little Miss Cuffin. And because Miss Cuffin is vegan she'll never include curds or whey ;)




Little Miss Cuffins With PB Glaze
Makes 6 Jumbos
3 medium overripe bananas
1+1/3 cup peanut butter
¼ C agave
¼ cup rice milk mixed with 1tsp apple cider vinegar
1 teaspoon non-alcoholic vanilla
1 ¼ cups flour
1 teaspoon baking powder
½ teaspoon baking soda

Preheat oven to 350. Line a 6-cup Cuffin pan .

Peel bananas and place in a large mixing bowl mash, then mix in the peanut butter with a fork until well blended. Add agave and stir in the rice milk mixture, and vanilla. Mix in the flour and baking soda. The batter will be thick. It’s cool if a few lumps remain. Using an ice cream scoop, divide batter between cuffin cups, filling 3/4 full. Bake for 20-25 minutes, or until a tester comes out clean, and remove to cooling rack. Cool in tin for ten minutes, remove from tin and cool on rack. Cool completely before adding glaze.

PB Glaze
3-4 Tsp Rice milk
1 cup powdered sugar
2 T creamy peanut butter
Directions- Just mix them together and drip over cooled Cuffins, or dip Cuffin tops upside down in glaze. Refrigerate for about 45 minutes.

MoFo 16 What a Lovely Bunch of Coconuts

I'm a driven idiot. Here it is 11:33 at night and I can't let one day of MoFo go by without me contributing something. Insite, crap, drivel. I wanna take another survey. Are we allowed to take more than one MoFo survey? Is that against the rules? I think I used mine up already. It wasn't one of the good surveys though. I don't think I got to answer what my favorite milk or ice cream substitutes are:
1. Vanilla Rice Dream
2. Almond Dream Butter Pecan Praline
3. As if anyone cares

The person I want most to convert to veganism is still:

And since I promised a dessert blog every other day. Here is a scrumptious Banana Coconut Parfait.
Banana Coconut Parfait

Serves 3
112oz silken tofu
1/4 C canola oil
1/3 C agave
 2 T coconut milk

1/2 C coconut milk
1 banana sliced
2-3 T shredded unsweetened coconut (toasted or raw)
1/4-1/2 C brown sugar

Line up 3 parfait glasses. Blend silken tofu, canola oil, agave and 2 T of coconut milk in food processor.
Layer sliced bananas evenly on bottom of the parfait glasses. Top each parfait glass with silken tofu mixture. Add brown sugar, drizzle coconut milk and top with shredded coconut. Refrigerate 45 minutes or more. Chow down my little coconuts.

Truth or Lie Pie

I made a cashew cream banana cookie pie today. And guess what else. No not that. Good try though. I found out that my husband kind of tells the truth.This is a shock to the system. I've gotten so used to Larry the Liar, that now I will have to change his moniker to Larry - something else - at least for now. You see, Larry is always raving and going on about how wonderful my baking and cooking is. I've always been gracious but I've also known how prone to hyperbole Larry is. We've had many fun filled hours with the gadget below.

Yes. Yes, in theory Larry sounds very sweet, and yes in theory Larry is, but sometimes I can't get a true read on whether something is really good or not, unless of course I have him strapped to a chair. Today I discovered the real truth serum. It's Cashew Cream (Banana) Cookie Pie. Larry hated it!!! He said he wouldn't like cashew creme any which way even in a savory dish. He doesn't like the texture, said it was too grainy. Yuk! Thank you Cashew Cookie Creme Pie. Now I can believe that Larry has really been wowed by everything I've made. But then again I liked this cashew cookie cream pie so much that I could I seriously devour the whole thing. Well now I won't have to share...


Cashew Cream Recipe for the Lie Pie
1 Cup Cashews soaked over night in 2 C of water and then drained
1/2 C H20
1/4 C canola oil
1/4C agave
1/2 tsp maple or non-alcoholic vanilla

Blend the cashews and 1/4 C of water on a high speed in your food processor until combined. Gradually add the remaining 1/4 C water. Slowly add canola in a fine stream. It'll start looking like cream. Add agave and flavoring. Refrigerate or freeze for 2 hours.

Larry the Liar Pie
About 12 TJ vanilla creme cookies or any vegan creme sandwich cookie
11/4 banana thinly sliced
2 T brown sugar or dark vegan chocolate curls (optional)

Twist open and separate the top and bottom of about 7 of the creme sandwiches. Cover the bottom of pie plate with creme side up. Place one thinly sliced banana over the cookies and then layer with the cashew creme. Top with the remaining banana and decorate with remaining whole cookies. Sprinkle with brown sugar.Refrigerate for a couple of hours or freeze for an ice cream type pie.
