<span style="font-family: Arial, Helvetica, sans-serif;">We are so grateful to live in California where the produce at our local market is bountiful all year long. I am not a gardener, Larry thinks he is, but by the look of the potted plants outside, he tends to kill the earth. </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">My late dad grew tomatoes and I would give him a blue ribbon for those "Land of the Giants" zucchinis his garden churned out every year. Between playing tennis, making museum worthy stain glass, (that did win blue ribbons), and almost blowing up the family and the block with his gas barbecue, my dad was a busy guy.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">Remember when the blackening of every food imaginable, you know blackened salmon, blackened veggies, blackened tofu was all the rage back in the 80's? My dad started the blackened craze with his gas barbecue. On the day the barbecue gas line almost crucified the neighborhood, my dad managed to blacken a delicious Yves veggie burger and corn on the cob for me. That Yves burger was especially good with my dad's fresh tomatoes. Good thing my dinner cooked up first, before the neighbor spotted the faulty power line. Nobody else got their meaty sandwiches, so no animals were harmed on that executioner's grill.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">In New York we had one tree that was vertical to the evil barbecue. It was a crab apple tree. That tree was kind of an asshole, annoying and useless. Even the tree was peeved at it's dead fruit bearing self, and was always trying to rid itself of it's rotten crabby apples. It was Heidi's and my job to pick up the post mortem apples and bag them. I think my mother paid us one penny per fifty croaked apples. Heidi and I were migrant workers in our own backyard. </span><br />

After five summers of picking and saving Heidi and I were able to purchase a clam of blueberries to feed our growing family of ten.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">1.5 C of unbleached organic flour</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">2/3 C coconut sugar</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1/2 C Corn meal</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1 T baking powder</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1/2 tsp sea salt</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1 1/4 C rice milk</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">2 T flaxseed mixed with 6 T of water</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1/3 C canola oil</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">3 T coconut oil</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Preheat oven to 350 degrees. Lightly grease an 8x8 baking pan. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Prepare blueberry mixture. Gently toss blueberries with 1 T lemon, 1/3 C coconut sugar. Set aside.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Combine flour, sugar, cornmeal, baking power and salt in a large bowl. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">In medium bowl combine rice milk or plant milk of your choice with flaxseed slurry, canola oil and 3 T of coconut oil. Add liquid mixture to the flour mixture and mix until blended. Fold in the blueberry mixture. Pour in to prepared pan and bake 35-40 minutes or until toothpick inserted comes out clean. Cool 10-15 minutes in pan on rack. Cut slices from pan. </span><br />

I had the opportunity to recipe test for Zsu's new book, Every Day Vegan Eats. Recipe testing can be especially fun when you send your husband aka Crazy Boy to five different stores to hunt down a spice he never heard of before. For most people salt should be pretty easy to find, and a little salt can be found in most of Zsu's recipes.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">They had an abundance of tofu. I was able to revisit one of my favorite recipes from Zsu's book and I made the seafood variation of the marinated tofu and served it with Zsu's famous tartar sauce.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Recipe</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">14 ounces of extra firm tofu pressed overnight</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">2 C water</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">2 T savory broth mix</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1/4 tsp salt</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1 T sunflower oil</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">Cut pressed tofu into 1/2-inch cubes.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Heat water, broth mix, and salt in medium sauce pan. Bring to a boil and reduce to a simmer.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Add the tofu and simmer for 10 minutes. Remove from heat and allow the tofu to sit in the broth for an additional 10 minutes. You may also keep the broth in an airtight container in the refrigerator for a week before continuing the next step.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Drain the tofu. Heat the oil in a large skillet over medium heat. Add the tofu and cook, stirring until golden brown about ten minutes.</span><br />

If you follow my blog you would know that I have a gag reflex when it comes to cooked celery, and raw zucchini. Maybe I shouldn't have started this post off with "gag reflex" since I really want to entice you with culinary greatness.</span><br />

My sister Heidi has had an ongoing affair, (all her relationships should last this long) with beets since she was a kid. Back in our bad ass HS days we would come home late squinty and red eyed, and starving. </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">1. Preheat oven to 400 degrees. Line a large baking pan with foil and spray. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">2. Dice vegetables.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">3. Spread vegetables and apple on pan according to a color scheme you enjoy. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">4. Roast for 10 minutes on one side. Toss, make sure that you toss the red beets last so you don't get the red on the lighter colored veggies or apple. Remove from oven.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">5.Bake bread, baguettes for 5 minutes at same temp. Spread bread bottoms with 1 T of vegan creme cheeze and return to oven for 2 minutes.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Preheat oven to 300 degrees. Place hazelnuts on unlined cooking sheet. cook for about 7 minutes. Roll in clean kitchen towel to remove skins. Chop. </span><br />

I asked Daddy if he was aware that penitentiaries don't serve any food that has sharp edges. Of course he knew, he was an officer of the law.</span><br />

I searched high and low for vegan rice pudding, not that my dad was a vegan or anything, I just wanted to give it a shot. (I probably shouldn't use the word shot in a story that talks about the can) Why doesn't anybody make vegan rice pudding? I would have been more than happy to make some but my mom had "keep out yellow tape" blocking her kitchen.</span><br />

I made it with basmati rice, coconut milk, agave, coconut oil, cashews and raisins and a pinch of cardamom. It went down a lot smoother than one of those pointy chips. I exchanged the flour in equal amounts of Bob's Red Mill Gluten Free Flour and added 1/2 tsp xanthan gum. I used caraway seeds and Pink Himalayan salt for one type of bagel, and cinnamon raisin for another. Although the recipe says it yields 12, I would make 6 bigger bagels next time because my family has big mouths.</span><br />

Add dry ingredients and mix until well combined. Scoop batter into liners about 2/3 full. Bake for about 21 minutes. Remove from oven and cool on racks.</span><br />

A good weighty object to use would be something like Tolstoy's "War and Peace" or the vegan War and Peace equivalent, Isa Moskowitz's "Veganomicon".</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Preheat oven to 425 degrees. Line two cookie sheets with parchment or foil. Cut each bread in half horizontally and then slice vertically. Line bottom of the breads next to each other.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Pour dressing evenly onto each bread. Add each ingredient to each bread. Top off with bread and cut in half. Here is the faker cheater part. Hold the top of the bread down, suffocating the bottom of the sandwich for about 40 seconds. Bake for 6 minutes until the cheez is drippy and as a cheezy as a lawyer.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Preheat oven to 325 degrees and line a jumbo 6 C tin with paper liners. In a medium bowl whisk all the dry ingredients. Add all the liquid ingredients, except the chunky apple sauce. Stir. Fold in the chunky applesauce. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Bake 11 minutes and then turn the pan 180 degrees and bake another 11 minutes or so, until top of muffin pops back easily when you press it. Let cool in pan for 15 minutes and then remove muffins to wire rack.</span><br />

Spread cauliflower and garlic on pan, spray again and roast/bake for 20-25 minutes. Remove from oven and let cool for about 15 minutes. Peel garlic cloves and add with cauliflower and broth to food processor. Puree. Add half of the puree to soup pot and then add the rinsed white beans to the food processor and puree with the other half of the soup left in the food processor. Add remaining puree to mix in pot. Bring to a boil. Let simmer and add shredded Daiya. Cook until cheez is melted about 15-20 minutes. Ladle into bowls and squirt each soup generously with lemon and a couple of shots of hot sauce. Yeehaw :)</span></div>

Add Liquid Smoke and Tabasco or favorite hot sauce to taste. Cover and let sit while you make the Avocado Creme.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Preheat oven to 350 degrees. Line a baking pan with parchment. In a medium bowl whisk the first three ingredients together. Add the oil, agave and vanilla. Pour the water into the mix and stir. Mix in the chopped dates and pecans til well combined. Scoop 1/3 C of batter for each scone. It might be a little crumbly, just piece each scone back together. Place an inch apart on the baking sheet. Brush each scone with melted coconut oil. Bake for 10 minutes. Brush again. Rotate pan about 180 degrees. Bake for 4 to 6 more minutes. Remove from oven. Let scones cool on their pan on a wire rack for 15 minutes. Remove carefully with spatula. These were quite good after a couple hours in the fridge.</span><br />

In medium bowl combine the first 5 ingredients. In another medium bowl whisk the dry ingredients. With a spatula carefully add the dry to the wet ingredients until a grainy dough is formed. Using a small scoop scoop dough onto prepared baking pans, spacing 1 inch apart. Flatten with heel of your hand. Bake cookies 1 inch apart for 9 minutes, rotate pans and bake another 6 minutes. Remove from oven and cool on racks for ten minutes and then remove cookies from pan. Let cool and then spread one cookie with jam of your choice and top with another cookie. </span></span></span></span><br />

Add soyrizo to your favorite vegan no ketchup chili and serve on top of polenta.</span></span><br />

<span style="font-family: Arial;">1 C warm water + 1 C warm water for later</span><br />
<span style="font-family: Arial;">1.5 T organic sugar</span><br />
<span style="font-family: Arial;">1 packet active dry yeast</span><br />
<span style="font-family: Arial;">3 C GF "Perfect Flour" Blend plus more for counter top</span><br />
<span style="font-family: Arial;">spray oil</span><br />

<span style="font-family: Arial;">Pour warm water into small bowl and dissolve sugar, add yeast until it foams, approx.10 minutes. Meanwhile, measure out flour and salt in a medium bowl. Add yeast mix after it has foamed and spray generously with oil. Slowly add the C of water just until the dough is easy to work with. Sprinkle some flour on your counter, dump dough on it and knead for about ten minutes. Form into a tight ball. Spray a bigger bowl and then spray the ball and place in the sprayed bowl. Cover with plastic and let sit for about an hour. After that time come back and knead again but this time just for about a minute. Put it back in the bowl. Preheat oven to 375 degrees and spray a baking pan.Take dough out of bowl and cut in half. Roll out to two circles. Place half of filling of your choice (we used tofu ricotta and spinach and TJs vegan shreds) on each upper half of the circle, fold over and then press fork designs all around. Place filled calzones on baking sheet. Bake for 25 minutes.Serve with a side of sauce. Drink lots of water. </span><br />
