Mofo Case #16 Harriet the Spy and a Voopee Pie Giveaway

Everyday at exactly 3:40 p.m. Harriet would have an after school snack before sleuthing. She would indulge in her favorite cake and milk. Then one day little Harriet became lactose intolerant and she would throw up right as she was gathering clues at the scene of the crime. One day when Harriet was actually minding her own business and her P's and Q's she stumbled upon an evil slaughterhouse.

Harriet: I want to remember everything and want to know everything about all this meanness.
Ole Golly: Well you must remember that knowing everything won't do you a bit of good if you don't use it to bring beauty into this world.
Harriet: Okay I am a vegan now and I want to help all the world be vegan and compassionate. And I am here to help find GiGi. I miss her voopee pies and I miss GiGi too I guess.
Ole Golly: You miss GiGi...you  guess?
Harriet: Well. GiGi is kind of annoying.
Ole Golly: True or False?
Harriet: True. She's annoying but still I miss her. I know, let's have a contest to win some of GiGi's famous Veganville voopees. Maybe that will bring GiGi back. I mean if somebody wins and GiGi isn't here to bake them then nobody would win and that would make GiGi sad.
Ole Golly: No sadness here. A contest it is Harriet!

Winner Not Announced Yet

And now another ridiculously important announcement from the nudnick who runs this blog.

*cough cough spit spit*

Hello...

Hello... Bet you thought that was all I was going to say... Hello.
Before we get to the announcement I'll let you in on a little secret. My shirt is on backwards in the above picture. Either that or Linda Blair has hijacked this site. And I am wearing a bicycle chain I borrowed from someone's bicycle. Apparently some people in the criminal justice system think I use the term borrow to loosely.

Guess what if you haven't played "Name That Voopee", the contest has been extended until June 30th, and so if you haven't named That Voopee yet you still have time, unless of course you are doing time, and I can't promise you voopees.
Contest will end at 10:27 PM right on the nose.
photo by Crazyboy, it's just so perfect that he found a dog with the exact time on his nose
Winner will be announced on Independence Day which is on July 4th this year.
But hey we'll see ya before then.
Thanx for swinging by.

Happy Thanksgiving 2012

Dear Everybody-

Veganville's Black Friday 4 Day Sale was spectacular, and had us working 12 hour days. Thank you to all the wonderful people who made purchases. A big shout out to my awesome readers who commented when I was MIA. Before we get down to business here I'd like to ask you a couple of quick but important questions. Most  importantly, do you all have my correct address so you can send me nice vegan gifts?
Just in case, you've misplaced my address here it is again:
                                               GiGi
                                               C/O the Pen Pal Program
                                                Attica
                                               Cell Block 7
                                               Sorry I forgot my zip

Next question: Is it January yet? Did I miss Festivus or any fun ethnic holidays? You know I hate being late. I'd rather not do a recap of Thanksgiving in the first week of December like another blogger friend I know, ahem ahem Andrea. Instead I am going to be the first blogger in the world to post my recipe ideas for Thanksgiving 2012. I win! I win! Serve these roasted chickpeas to your Thanksgiving 2012 guests. Since they are roasted they might have a good shelf life.
I swiped this delicious roasted chickpea recipe from Michelle over at lovinlivivegan. Michelle testified, hence my new sentence. Sorry about the chipped plate, it is the best I could do in the can. P.S. these chickpeas are from a can.

This is the cashew-cuke dip on page 66 in Veganomicon, served with some toasted pita. Some of the stupid pita bread was moldy. I salvaged a couple of pieces and gifted the rest to my slumlord. I told him it was pesto. I made this recipe twice over the holiday and will make it twice over the Thanksgiving Holiday in 2012. Hit me up if you'd like the recipe. I'm in the pen pal program, you know.
You see this funky pie thing. Down there. This is my answer to the looming question about Thanksgiving. Why does everybody eat leftovers the day after Thanksgiving? Everybody loves leftovers so much, so why don't we all just eat leftovers on Thanksgiving Day. This is leftover pasta made into a pizza. Come to my house for leftovers on Thanksgiving 2012! I should be out by then. By the way I added Nasoya tofu to this delectable pie. The Nasoya people just sent out a tee shirt to me to tell you that I used their product. They sent along some coupons too. I'll be back in the next couple of days with a giveaway and your chance to win these same Nasoya goodies. Stay tuned. I'll bring you the recipe and brand new video too.

Leftover Pasta Pie For Thanksgiving 2012

These babies are the Molasses and Lemon Voopees for sale over at Veganville. I can't leave you without giving you a new coupon code. Get 20% off at Veganville with coupon code veganmeow.
Well I'm off to my "write and go free" class. Boy I miss sharp pencils! Happy Thanksgiving 2012 everybody.

Hey these are the perfect cookie to have when you are craving an island get away!!

2 Sticks Earth Balance softened
1 Cup Organic Brown Sugar
1 C Vegan Organic Sugar
¼ C water mixed with 1 T Ener-G Egg Replacer (or if you can't stand this stuff, 1 flax slurry)
1 tsp non-alcoholic vanilla or 1 tsp coconut flavoring
2 1/4 C unbleached flour
1 tsp baking soda
1 tsp baking powder
tsp cinnamon
1 tsp ginger
2 C rolled oats
1.5 C grated carrots

Preheat Oven to 350. Line 2 baking sheets with parchment. Cream together Earth Balance and both sugars on medium speed until fluffy. Add egg replacer (or flax slurry) and vanilla and mix until combined. Sift flour, baking soda, baking powder and spices in separate bowl. Add gradually to Earth balance mix and mix until combined. Mix in oats, carrots and pineapple and macadamias (papaya if using) until just blended. Use medium size ice cream scoop to scoop into balls and place 2 inches apart on baking sheets. Refrigerate for an hour before baking. Bake  around 20-25 minutes until lightly browned. Cool completely before filling.

Vegan coconut cream cheez frosting

1 stick Earth Balance (softened)
4 oz. Tofutti (softened)
3 C vegan powdered sugar
1 tsp non-alcoholic vanilla

1/2 C unsweetened shredded coconut

Cream Earth Balance with Tofutti. Beat in confectioner’s sugar a cup at a time. Remember to scrape down the sides in between. Add vanilla and then add rice or coconut milk..

A "To Whom It Concerns" Letter to Me

If you are trolling cyber space now and happen upon Veganville I would like to be perfectly clear. Today, to the untrained eye Veganville might appear to be a job resume service. Today and only today we might appear to be loosely associated with ESL or even the Better Business Bureau. Normally all these fancy pants factions are outside Veganville's jurisdiction. Veganville is a place that is concerned with vegan food, occasionally fashion, and cruelty- free makeup. You know all the true sustances of life. Stick around I'll give you some food pics at the end of the post. Right now I need to get on my high horsey. It's my blog and I can cry if I want to.

Every other week I receive an e-mail from a blogger interested in Veganville goodies. At first this might be flattering until you read the body of the letter and hit their link. I am always gracious. I have done giveaways on reputable sites, mostly vegan and am always happy to participate if the site is truly interested in Veganville.

Dear Etsy person-
Yummy. I have a blog. I think yer stuff wuld be perfect and my readers wuld like ur stuff alot.
Here is the linc: I wuld like to revue yoiur box.

"Lincs" invariably lead me to army wife blogs or Appalachia themed food sites. Postings include roast piggy complete with mouth apple, "revue" of charcoal briquette, and how to make garlands from Vienna sausage and fruit loops. The magical fit with their readers seems to elude me.
Today I received a letter that was so excited about me and Veganville.

To Whom It May Concern,

I have a blog about food called " ". I do reviews & giveaways of different products for companies. You can check out my blog here:  Please let me know if you would like to work with me on a review and/or giveaway. Typically a company will send me something to review and then I’ll offer the same item or items to a winner on my blog...blahblahblahblahblahbladdy blah.

At least I got a "yum" in the Appalachian letter. Correct me if I'm wrong here. I think that's a form letter. It's not even from the IRS or Visa. It's not a publisher rejection letter. It's a letter to me, although they don't know who I am, what my shop is and never mention any of my product. They would however like me to pay at least $22 to ship my items to them and their lucky winner. This does not include my labor fees or ingredient costs. Yippeekayay. Note to sender if you are in the job market please don't send potential employers form letters. Read:dumpster.

To Whom it may concern
You are not getting the above Sam Sam cake!
Signed,
I am not concerned

Now that I got that off my chest. Check out this customer appreciation photo I received from an Austin, Texas fan . I think this beautiful face is the perfect candidate for the national "voopee pie" campaign. Thank you so much!

What do you think? Got any Veganville pics, I'd love to see them. Thanks so much!

For The Horseys!

After last week's jalopy hullabaloo I almost forgot to tell you something. I like to share the good stuff too, you know. Particularly when it comes to some shameless self promotion. There's always good if you look for it.

Veganville's PB Lover's Voopee romantically dubbed "PB and Chocolate Get Married" Voopee was chosen as one of Etsy's top five cookies of the week over at this delightful blog called Silverrose Designs.  Holly Westfall promotes other Etsian artists as well as her own beautiful shop, but I made this ...She does not make voopees. Maybe she does, most people do these days.
Holly hand crafted these stunning earrings though. I did not. It's hard to make jewelry when I'm making voopees.
Here is the coolest thing about the above jewelry. You get to support a great animal organization! 100% of the purchase price on these earrings goes to benefit Forever Morgans. FM's mission statement:
ForeverMorgans is an organization of volunteers whose purpose is to be a resource for Morgans in need, whether they are surrendered, rescued from shelters, auctions, kill buyers, or simply removed from potentially dangerous situations. ForeverMorgans wishes to open our virtual barn doors to all Morgans in need of safe and loving homes. We focus on registered Morgans but will consider unregistered Morgans on a case-by-case basis.

So gallop on over to Holly's Shop. You'll be doing a good deed, indeed! I'm done horsing around (oh, boy- sorry). Thank you Holly!

Experiment in the Kitsch Pre Rapture

I had a moment in the test kitchen yesterday. There is a reason they are called experiments. Do you know what an experiment is boys and girls? According to Webster an experiment is a method of testing - with the goal of explaining - the nature of reality. For reals. I'm working on Orange Uncrummy Muffins. Although delicious, (crazy Taurus man downed the whole tin), they are not ready to present to the world for some unexplainable reason. They need to be cosmetically tweaked- a little kitchen botox.

And now for some shameless self promotion... drumroll please. Check out the Veganville interview at Christine Murray's gorgeous blog called Kezia and Friends.
http://keziandfriends.blogspot.com/2011/05/veganville.html

While there take a gander at Michelle's handmade jewelry at her Etsy shop at http://www.etsy.com/shop/maryanny143

I Love these! Just in case anybody missed my birthday ^ mid- April .

And as if that special feature wasn't enough excitement for one week, a treasury Veganville's Assorted Chocolate Voopee box is in made the front page of Etsy. That's big stuff! It's like having a commercial run during the Super Bowl, whatever that is.

It was created by the talented and whimsical and villainous Sinister Soaps. Vincent Price would be proud.
Here's just a sampling of Sinister's wares.  See you after the Rapture, my friend. Bahahaha.

The Activist and the Cupcake

I know. I know I've been missing in action here. Do you even know I haven't been here? It's been a whole week. Lately when I'm not working, I'm sleeping or trying to wrap my head around global catastrophe. I pray a lot. For Japan of course. Other countries. Sarah Palin's soul. I want to do something. I know I will. Throwing a few bucks at the tsunami relief fund seems trite. I started to set up a product with donation proceeds on my Etsy page and I took it down.  I didn't want to jump right into this now and then forget about this disaster up the road when this will take years maybe decades to rebuild a country and people's lives.
I was at a party about a month ago. I had catered the dessert and knew very few people there. I was also an inconspicuous guest. I was wiped and took up space on the couch. This woman sat next to me. She fondled a cupcake, and held it up to her friend across the room and Soto vocce "these are the best cupcakes I've ever had." Her friend pointed to me and said, there's the baker. The woman introduced herself to me and covered her heart with her hands and praised my almighty cupcakes. The woman and I chatted and she told me she was an international peace activist. Like right up there with the Dalai Lama. Really. We discussed world events, or rather she did.
I interjected very astute opinions like, "Oh what a bloodbath!" I think I said that several times.  "Oh what a blood bath!"And "Yep, it's a good thing that guy in the Middle East stepped down." or "it could have been another blood bath." Feel free to use the blood bath retort at your next party. It's a great icebreaker.
Believe it or not the international activist thought this was a very good point, and then she got up to get another cupcake.
As I gathered my trays to leave several Buddhist guests were gathered at the cupcake shrine. They placed there hand over their hearts and nodded their heads in reverence.
"You are doing a great service to mankind".
Humbled and grateful, I answered in my best Brooklyn accent.
"Go on... get outta here."

So I'm not sure what I can do about anything except show up, do the next right thing and more will be revealed. In the meantime, here's some comfort food pics. Wishing you all peace.

Who's Your Vegan Buddy?

Hey I totally forgot to tell you about the ultra cool writeup I received from the lovely Amandah over at her blog "And it's Vegan". http://anditsvegan.blogspot.com/2010/12/veganville-voopee-pies.html

If you dig doggies, dessert and well... ME check it out. Amandah's got one smart little buddy there. He knows a great cookie when he sees one.

And speaking of canine cuties, Veganville is now putting together "The Buddy Bag". It's a cookie bag filled with two PB Voopees
It's not a cake it's not a cookie
It's got a creme filled middle
It's a Voopee.

One big voopee is labeled Human. One smaller voopee is labeled Buddy. Now you can share a snack with your buddy! We tried it out at Catahoula Cafe a dog friendly cafe.http://catahoulacoffee.com/ in Richmond California.

Abbey scopes out the Veganville Buddy Bag
photo taken by my buddy-Larry
Feeding vegan treats one dog at a time (right before a pedestrian kicks me)

Catahoula is actually breed of dog "the Leopard Dog of Louisiana".The  cafe owner Timber rescues Catahoulas and has two Catahoula companions, Mocha and Abbey. Timber and the guys roast their own coffee at Catahoula. Abbey the oldest of Timber's Catahoulas noble face grace the bag. Catahoula already loves our regular Voopees, I overheard a Chihuahua tell a Setter, " Tell the President of Veganville to throw it to the dogs". So I did, I did.

MoFo 21 Chocolate Lover's Box

It's dark and dank out. Just a perfect night for a hot shower, and snooze after a long day in the kitchen. Woke up groggy with a growling tummy. When I padded into the kitchen Larry was adding veggie broth to left over tempeh and rice noodles. Marcia was grilling some ciabotta with Earth Balance. I preferred to spray some oil in a pan for a quick rice noodle sautee sans soup. We all seemed quite content with our carb comfort, but I think we were all secretly jonesing for one of the new Veganville Voopee pies.
My friend Simon the Pie Man took this pic

Check it out! I'm so freaking excited! There's Razzlin Raspberrry, Jivin' Java, PB, Minty Oreo, and a Sweet Shmear sandwiched inside each one. They're perfect with a tall glass of cold vanilla rice milk or a hot soy chai. Thanx for swinging by. See you tomorrow.

MoFo 14 Yippeekay Dessert Day

Yippeekayay it's dessert day here at Veganville. Yep these are a couple of the new Voopee Pies you see. Truth be told before they hit the oven I didn't think I'd like them as much as the "Punk-in" or "What's up Doc" or "PB Lover" voopees. I mean what's the big deal about chocolate anyway? Ho hum. Zzzzzz. Well 17 minutes later these "little devils" wafted through the oven door and awakened me from my chocolate indifference. Those little devils cooled out on a rack, (no not my rack), and called to momma. While they were chillin' I whipped up a couple of different frostings.
And Let me tell you, the new voopees melt in your mouth with a basic vegan butter cream.
Vegan cream cheese frosting makes them decidedly decadent.
Lastly, (I'm sorry I don't have a picture here. I will later in the week with a recipe). I switched up the whole voopee with spreading the inside of a one cookie with raspberry jam and then frosting it with a raspberry, tofutti and earthbalance cream cheese filling. OMG another new Voopee. I think I'll name it "Truffle Off to Buffalo". Maybe. Who knew that cocoa could be so good? All this time, I've been in the dark about chocolate, (bad pun intended).

See ya tomorrow.

Veganville Voopee Winner Announced

I am in beautiful Southern California visiting the judges of the first annual, "I Love Voopee Pies Contest".
I think I need a prize.
There were entrants from all over the world and lots of drool worthy flavors to choose from. This was no easy task for the judges. I did do thorough background checks on each of the judges before hiring them.

Judge number one-  91 year old ex - big wig, (Deputy Inspector on the N.Y.P.D.), WW II Vet, Edgar Cayce advocate, Semi - Pro athlete smarty pants, Emcee, (Stand Up) and my Daddy.

Judge number two- an ex - chorus girl, singer, immigrant, hospital volunteer worker, mystery reader,  mystery club president, and ex - doubles player. (I was of course suspect of this applicant's past, but since Mommy is married to an ex cop she met on a raid, I accepted her judge's application.)

Judge number three is a bi - polar pianist who paid me off.

Everything was done fair and square and there were hours of deliberation. Unfortuanately there was a leak and one of the contestants found out who the winner was before the winner was even announced. I found this out on FB. Yes, Heidi, a contestant from Southern California, is quite disgruntled and believes the judges should be institutionalized for not voting for her flavors. Although I agree with Heidi about institutionalizing the judges, it would not be for their supreme judging abilities. Perhaps I should not let my sister Heidi enter my contests any more. I don't know, there was a time when Heidi was the only contestant, so I think I have to let her play.
Anyway, this contest was not fixed!

My judges numbered their ballots vertically and I read aloud each flavor. Next to the number they wrote NG (no good), F (fair), E (excellent). We weened down the applicants and then there was an argument about their favorites. Judge 1 and 2 asked why no one had entered any chardonnay or burgundy flavored voopee pies? (Clear winners with these two judges.)

All in all the contest was a great success. Drumroll please!!!
Winner of the first annual Voopee Pie contest is Sherry a vegan blogger and jewelry maker from Chicago with her entry- Chocolate - Raspberry!!! Yay Sherry!!!
Sherry will receive a box of Veganville Voopee Pies in her choice of flavor.
You can check out Sherry's awesome blog at: http://www.exploitsofaveganwannabe.com/

Thank you all for playing!!! You all had such great flavor choices that if I were judging I would have awarded you all a prize. I suspect lots of your flavors will show up in Veganville Voopeeland.

Hugs,
GiGi
President of Veganville

Java Jolt

It's only been a couple of days since the Veganville Voopee Pie contest began and I've already received a myriad of drool worthy flavor entries. This is very exciting. This morning I am very excited to be excited since yesterday morning I was a tiny depressed slug on a rug. Of course today's excitement could be a bit of coffee generated madness. I don't freakin' care. I'll take what I can get. Over the years my Dickensian pit of despair has become less frequent. My restless nights at the orphanage are over and I no longer fear debtor's prison, the Bastille or even a shitty Christmas. I am happy :) to say the face of dysphoria has changed. Once in a blue moon, (get it bahaha), I will creep into the rocking chair and focus on an object way across the room. Who cares if telekinesis isn't what it used to be. Yes Uri Geller has been debunked and even I've lost interest in bending spoons. I do however try to clean silverware from the next dimension. Still, in my bleak house of despair I question my contribution in this lifetime...and of course  just question the universe in general.

What if my Veganville Voopee Pies are all there is, my friend?
What if the Voopees are not cakey enough?
Vut if the Voopees are too cookie? and then...
Did Sylvia Plath ever make a baked potato in her oven?
And if Sylvia did...Did Sylvia use Earth Balance?
Why isn't that cup moving?
Do I have to wax my mustache again?

And then in a flash the hard questions pass and are replaced with...
How 'bout a new Java Jolt Cupcake?
or a Brooklyn Black and White Cupcake-
or a...Coffee Glazed Espresso Bundt Cake-
 or Quinoa Tabbouleh or...
and then I'm up and off my rocker and back to sticking my head in the oven. I think Sylvia made french fries.

Check out this mind bending silverware on Etsy. I love these!!! You can find them on Etsy at Vegan Aesthetics.

http://www.etsy.com/listing/52531310/hand-stamped-vegan-silverware-set

If these don't perk you up how 'bout a Veganville box of Java Jolt Cupcakes? Keep those entries coming. Thank you!!!

Big Whoopee!

I don't like to keep peanut butter around. Peanut butter is relentless. Ground buttery legumes whisper to me from wherever Larry has tried to hide them, behind the coriander and cumin, beneath a Peet's house blend, or under several semi-dark chocolate chip bags, or even in the closet next to his hats. That pesky PB jar knows that I am just an arm length and a big wooden spoon away. PB was my first vegetarian go to food. I bought fresh PB in tubs from my local health food store where the PB was still warm from the machine. I ate it from the container and spread it on graham crackers with a little bit of honey, (now of course it would be agave). When I was 18 I lived in Louisiana and on a midnight jaunt found Mr. Peanut Butter Cookies in the town's Piggly Wiggly. Hello Beautiful! I think Peanut butter should have a skull and crossbones on it just like Scope. Wait. Scope doesn't have a warning label on it. Maybe Scope is just considered poison in our house, but enough about mouthwash that you can chug in a pinch. This blog is about PB, my friend.

So I do not keep PB anywhere near me, on a regular basis, but when a craving hits me I justify peanut butter's presence. This week PB was part of the test kitchen. We made whoopees. Not just PB middles either. PB everything. OH boy oh boy oh boy!

2 1/4 C unbleached flour
1 tsp baking soda
1 tsp baking powder
1/2 C (1 stick) Earth Balance
1/2 C brown sugar
3/4 C Peanut butter, crunchy or smooth, your choice
1 1/2 tsp non-alcoholic vanilla
3 Tsp Ener-g Egg Replacer mixed w/ 1/4 C water
1/2 C Rice or soy milk mixed  w/ 1 T apple cider vinegar (to make vegan butter milk)
1 C chocolate chips, optional

For the cookies:
1. Preheat the oven to 375°F. Line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, baking powder; set aside. In a large mixing bowl, cream together the the Earth Balance, brown sugar, and peanut butter and beat in the vanilla.
3. Add the egg replacer 1/2 at a time, scraping the sides and bottom of the mixing bowl to make sure everything is evenly mixed
4. Add one third of the dry ingredients, and mix until moistened. Add half of the rice milk-vinegar mixture, and mix until combined. Scrape the sides and bottom of the mixing bowl, then add the remaining flour mixture and remaining faux butter milk. Scrape the bowl again during this process; the peanut butter tends to stick to the bottom.
5. When the batter is evenly mixed, stir in the chocolate chips, if using. Use a large ice cream scoop for large pies and scoop onto the prepared baking sheets, leaving 1 1/2 inches between each scoop.
6. Bake for 12 to 14 minutes, until the tops spring back when lightly touched, and a skewer inserted in the center comes out clean. Remove from the oven and cool completely on a rack before filling.

I tried the whoopies with and without the chocolate chips and found them equally delicious.

Filling
1/4 C Tofutti Cream Cheese softened
1/4 C Earth Balance softened
2 C Confectioner's Sugar
1/2 C Peanut Butter
1-2 T Coconut milk

Cream Tofutti with Earth Balance. Add peanut butter, til well blended. Add confectioner's sugar and mix for about 3-5 minutes until smooth but pretty stiff. Add coconut milk a Tablespoon at a time until spreadable. At this point you might want to taste it because well, you just can't wait.

Spread on one cookie and top with another. These are big whoopees!

My Blog for "Life in Recipes" (carrot cookie sandwiches)

A while back, Janet and Rachel invited me to be a guest blogger. I’m really excited to be here at Life Told in Recipes. I just hope they remembered that I was coming. I noticed that other guest bloggers received some interview questions and a lead in. I flew all the way from Veganville too. Veganville is my place in cyber land. I’m a vegan food and fashion writer, sometimes irreverent essayist. I’m also the owner of Veganville a small vegan baking and cooking company in Berkeley, California. Hmmm wonder where they are…
Since I’m here, I’d like to mention that I never proselytize but merely expose some truths about certain industries. Today, I’d like to take this opportunity to tell you about my experience with Martha.
Martha is a thug! There was a time when Martha thrived on sustainable ingredients but that was before she did time in the pokey. I’m sure you’ve heard about her famous ketchup packets and cigarette butt gazpacho by now, but I bet you didn’t know that while doing time, Martha also made eyeliner from peas. She fenced a lot of local ingredients and always composted while in the yard. Martha stopped eating the green meat and slimy eggs and was one step away from Veganhood when she was released.
This was the first cake she asked for on the outside.

It’s made with 582 eggs. Think of the chickens Martha, they are not as free range as you think. There’s a lot of crowding and barbed wire going on in those places, Martha. Think of a prison for chickens. I think I might have heard Martha cackle “I don’t care GiGi - I’m out”.
I took the liberty to veganize some Martha cookies.

Martha’s in the Big House Carrot Sandwich Cookies
2 Sticks Earth Balance softened
1 Cup Organic Brown Sugar
¼ C Water mixed with 3 tsp egg replacer
2 C unbleached flour
1 tsp baking soda
1 tsp baking powder
Tsp cinnamon
½ tsp nutmeg
½ tsp ginger
½ tsp allspice
2 C rolled oats
1.5 C grated carrots
1 C raisin
Preheat Oven to 350. Line 3 baking sheets with parchment. Cream together Earth Balance and both sugars on medium speed until fluffy. Add egg replacer and vanilla and mix until combined. Sift flour, baking soda, baking powder and spices in separate bowl. Add gradually to Earth balance mix and mix until combined. Mix in oats, carrots and raisins until just blended. Shape a T of dough (a small ice cream scoop works well) into balls and place 2 inches apart on baking sheets. Bake 12-15 minutes until lightly browned. Cool completely before filling.
Vegan cream cheez
¼ C Earth Balance (softened)
¼ C Tofutti (softened)
2 C vegan confectioner’s sugar
1 tsp non-alcoholic vanilla
Cream Earth Balance with Tofutti. Beat in confectioner’s sugar a half a cup at a time. Remember to scrape down the sides in between. Add vanilla last.
When the cookies are completely cool, spread about 1 T of vegan cream cheese on the bottom of one cookie and then sandwich it together with another. Enjoy!
