MoFo Case # 10 Psychic Hotline and Spinach

Larry and Jerry Call the Psychic Hot line

Spinach Mash Balls Recipe
Leftover Mashed potatoes or about 2 pounds newly boiled Yukons
2 C finely chopped fresh spinach
1 C diced onion
2 T Dijon 
3 tsp favorite hot sauce
3 T lite coconut milk
lots of seasonings salt and pepper

Preheat oven to 450 degrees. Mash everything together. Line 2 baking pans with foil and spray. Use a melon ball scoop to make small spinach mash balls. Bake for 15 minutes on one side and then flip with a spatula and bake for another 10 minutes.

Tofu Sticks
1 pound firm tofu drained and pressed and cut into sticks
1/4 C cornmeal
1/4 C unbleached or GF flour
1/2 C coconut milk mixed with 1 T apple cider vinegar
Lots of salt and pepper

Preheat oven 450 degrees. Already done if you are serving with Spinach Mash Balls. Line a baking pan with foil and spray. Pour liquid into one shallow dish. And flour mix into another shallow dish. Dredge tofu sticks with coconut milk and dip into flour mixture. Make sure you coat both sides of tofu stick. Place on foil lined pan. Bake for 20-25 minutes. Flipping gently halfway through cooking time.

Serving suggestions: Dipping sauces. Great with peanut sauce, guac, salsa or sea salt and vinegar.
