Mofo 13 Faker Feta With Kalamata Olives and other Stuff



Now that that is settled,(See video above) the manufacturer's directions tell me I need to leave the barrel in the freezer for 16 hours. 16 hours? 16 hours? I read the info about the 16 hours after I read the recipe booklet that said the ice cream would take 2 hours to sit in the freezer. Now that's 18 hours. There goes my big big plan of eating ice cream for dinner.

There is no way me and crazy boy are having popcorn again for dinner tonight. I feel like the Dead Sea after all that sodium. This of course won't keep me from salting our dinner tonight. I like to wake up looking like a cross between a Cabbage Patch Doll and Rodney Dangerfield.

Just for an update... Remember the 28 day Engine 2 Plan Diet Larry and I were on...we're still doing it. It's about day 35 of the 28 day plan. So we are still off sugar, oils, fats and any white (even unbleached organic) flour. I love doing it. The plan is great. It has kept me from noshing on too much sugar in the kitchen. I no longer have frosting jowls. I have more energy, and our skin looks good. We've lost our tire tummies too. I've lost a few inches (no not in my height). The scale arrow would go farther down if I could just kick the confounded almond butter addiction.

Tonight's Reluctantly Healthy Dinner is...

Broccoli with Cherry Tomatoes, Kalamata olives and Tofu Feta over Rice Penne
1 Package Rice Penne
2 Cups broccoli chopped
1 C kalamata olives
1.5 C cherry tomatoes halved (easier to half with a bread knife so they don't squirt in your eye)
1/4 C salsa
1 T vegan pesto (optional)
1 clove garlic
TJ's 21 Salute
canola spray

Feta
1 package of firm tofu, drained and pressed (about 15 minutes each side)
1 T sea salt
3 T red wine vinegar
2 T oregano
1 T basil
(dill and 2 T olive oil optional)

Put water on for pasta, while draining and pressing tofu. Spray skillet with canola spray, saute broccoli with kalamata olives, about 6 minutes. Add cherry tomatoes and saute another 6 minutes. If you are not on the Engine 2 plan feel free to add 2 T olive oil to the skillet or to the tofu faker feta. 

For the Faker Feta
Crumble drained and pressed tofu into bowl and mix with remaining ingredients. Add to skillet and cook for about 12 minutes. Serve over pasta or rice.

Buy some coconut ice cream for dessert unless you have 18 hours to wait. See you tomorrow. I promise to drink some water before I see you, so I Iook a little better.

  6. Oooh you didn't intend the video to be too dark? I thought it was an effect you were going for. :oP

    The tofu dish looks scrumptious! And healthy too considering the low oil-ness of it.

    Yay about your ice cream maker arriving finally!! :) Leaving the container in the freezer for 16 hours seems less actually. If I remember correctly, ours asks for a 48 hour freeze. We leave our container permanently in the freezer. After each round of making ice cream, we let it thaw, wash it well and dry it thoroughly (very important step!) and then wrap it in a plastic baggy and leave it in the freezer. It sits there until the next time we want to use it. That way, all you need to do is worry about preparing your ice cream mix and leaving it in the fridge for 16 hours (missed that part, did you?) and then freezer the mix in the ice cream maker.
