Mofo Case #9 Jerry Writes to Mommy the Missing Blogger, and Eats Mostly White Food





Daddy is going to let me have white food for dinner tonight. Not exactly white though not white like the North Pole or Snow White, or Petey's annoying dog Fluffy. If I don't have a hissy fit like I did on Prime Time then I can eat anything I want, vegan of course with no white sugar or anything. So daddy is making me almost white soup and I picked out triangle crackers in Target. Mommy doesn't really want me to eat triangle crackers, Mommy says they aren't that bad but still they are kind of processy, and who needs to eat that sh*$. I am not supposed to say that she said that though.

Here is the soup and then for dessert I get to eat a special snowball.
Roasted Cauliflower and White Bean Soup with Lemon
1 head of cauliflower cut up
5-7 cloves of garlic not peeled
1 Can white beans drained and rinsed
4.5 C veggie broth
4 Ounces shredded mozzarella Daiya
1 lemon
salt to taste
hot sauce to taste

topping suggestions: vegan sausage rounds, scallions, drizzle of olive oil, avocado

Preheat oven to 400 degrees. Line a baking pan with foil and spray with non-stick oil. Spread cauliflower and garlic on pan, spray again and roast/bake for 20-25 minutes. Remove from oven and let cool for about 15 minutes. Peel garlic cloves and add with cauliflower and broth to food processor. Puree. Add half of the puree to soup pot and then add the rinsed white beans to the food processor  and puree with the other half of the soup left in the food processor. Add remaining puree to mix in pot. Bring to a boil. Let simmer and add shredded Daiya. Cook until cheez is melted about 15-20 minutes. Ladle into bowls and squirt each soup generously with lemon and a couple of shots of hot sauce. Yeehaw :)

Me and Daddy like these raw snowballs with chocolate crust more than Mommy does.
You can find the basic recipe here. But Mommy puts these in big muffin pans and adds an extra banana and half a cup of unsweetened shredded coconut to the filling.

    1. Those are triscuit thins, something Jerry's mommy would never buy. Maybe Matt would eat the pureed kind, hard to tell it's cauliflower.

  3. I'm glad to see Jerry is not too upset to eat. The soup looks very good and he needs to keep his strength up. GiGi will return soon. Maybe she is running a marathon and it's taking her longer than she thought it would. Or, maybe she really is at the North Pole buying presents. It's hard to say.

    1. Jerry lost his appetite for a couple of days, but is doing well on liquids. Thank you.
      GiGi is probably in no shape to run a marathon after the elbow fracture, but keep your hopes up Andrea, we appreciate it. We think she will return soo.

  5. Those triangle crackers look good. I am betting they are the evil, wheaty triscuits! I like Jerry's thinking about eating white food to get you to come home! Oh when will GiGi be found?

    1. You are a smarty pants, VeggieAmanda. Those are indeed the evil wheaty triscuits.White food and off white food is fun.
      Keeping our fingers crossed on our end that GiGi is found soon.

  6. If Gigi is in the North Pole, would she mind putting in a good word for me with Mr. Claus? I could really go for a fancy international vacation or a Mini Coop. If not, maybe I'll just go buy some crackers. I know that Jerry likes them, and he's no dummy. Oh. Wait.
