Mofo Case # 14 Answers to Vegan Quiz/Clues Revealed and the Best GF Cupcake Ever

If you have been following the case of the Missing Vegan Blogger, perhaps you were kind enough to help headquarters with clues of GiGi's whereabouts by taking our last vegan quiz. If you weren't kind enough, here is the quiz.

Did you know that there are thousands upon thousands upon even more thousands of vegans globally? Even more importantly did you know that at least three amongst the thousands of vegans sometimes read this blog.

Well the stars must have collided on quiz day, because guess what, all three Veganville readers took the quiz. On the same day!

We here at GiGi headquarters recognized a startling similarity amongst Veganville's three readers. All three readers are Gluten Free. Yep, it's true. 

We would like to say that these readers all aced the quiz, but unfortunately they all fu**ed up. 
Still, they were kind enough to try to find GiGi by taking the quiz. So today we honor our gluten friends by spelling out the answers on the best darn GF cupcakes headquarters has ever tasted. We made the crappiest GF no sugar icing too, but we chucked that. It's okay, the cupcakes are good enough to stand up by themselves.
A special shout out goes out to Andrea of Andrea's Vegan Cooking high scorer on this quiz,
Amanda from Newman Improved and Kylie from Fellowship of the Vegetable.
They all have wonderful GF blogs worth checking out, and have been incredibly helpful in adding their thoughts about GiGi's whereabouts during this ongoing investigation.

GF Maple Vanilla Cupcakes

2/3 C soy milk
1/2 tsp apple cider vinegar
1C GF flour (mix that has xanthan gum already in it)
1/3 C coconut flour
3/4 tsp baking powder
1/2 tsp baking soda
1/8th tsp salt
2/3 C maple syrup
1/3 C canola oil 
1.5 T vanilla

Preheat oven to 325. Line a muffin tin with a dozen standard liners. Whisk soy milk with vinegar and let stand for a couple of minutes. Add canola oil, maple syrup and vanilla to mixing bowl and mix. Add dry ingredients and mix until well combined. Scoop batter into liners about 2/3 full. Bake for about 21 minutes. Remove from oven and cool on racks.
