Recipes for MoFo 8 Gesundheit Blog

Here are the recipes as promised from yesterday's Gesundheit post.
Thank you all for your well wishes. I am feeling so much better today. Your good thoughts helped.

Warm German Fest Potato Salad

2 pounds potatoes (I mixed Red with Yukon)
5 slices maple flavored tempeh
1 small onion diced
2 Bubbie's pickles diced
2 celery stalks diced
1/2 C veggie broth
1/2 packet of Stevia
1 T  mustard
2 tsp paprika
1/4 C apple cider vinegar
sea salt
 a few sprigs of parsley chopped

Place potatoes in a big pot and cover with cold water. Salt and cover with a lid and bring to a boil. Uncover and reduce heat to a simmer until potatoes are tender. About 20-25 minutes. You can check their tenderness by poking them with a fork.
Drain and set aside until you can handle the heat. You can do it! Cut into bite size pieces.
Cook tempeh in sprayed fry pan for about 4 minutes each side, remove. Spray pan again and add diced onion. Cook for about 8 minutes. Add broth, vinegar, Stevia, mustard, sea salt. Bring to a boil.
Place bite size potatoes in bowl add cooked tempeh, celery, and pickle, then toss with dressing.


Sprinkle with parsley.

 
Apple and Horseradish Creme (based on recipe from Joy Of Cooking)
 
1/4 C grated horseradish
1/3 C diced pippin apple
juice of 1 lemon
1/2 packet Stevia
1/2 tsp sea salt
1/4 C plain vegan yogurt
 
 
Stir first 5 ingredients together in bowl. Add yogurt stir. This was the perfect accompaniment to our tofurky sausages.

  3. The horseradish creme sounds intriguing, though I'm pretty sure if I try it I'll have to have an equal amount of antacids on the side.

  4. Hi Laura- I actually cut down on the horseradish, it initially called for 1/3 C, I thought this was perfect so it might not be that strong for you.

  5. I am really craving potato salad! I don't like horseradish, but I'd be willing to give it a try for this. Are those veggie sausages glutenous? I hope not as I'd really like one!!

    1. Oh there is no horse radish in the potato salad so you're good to go, VeggieAmanda, unfortunately the tofurky is glutenous :(

  7. Is it? I don't think I ever had it before. I thoiught the horseradish would clear out my sinuses but it just made me sneeze more. It was quite good though.
