MoFo 22 Breakfast For Din Din

Week 2 of Crazy Boy being out of commission. You know how every Wednesday Crazy Boy makes something, or signed on to make something for my blog. Well this is the second or third week in a row that he putzed around and didn't show up for his turn at the blog. As far as I can tell he is really sneezing. And he's coughing a little but not exactly hacking and he did sleep a lot today. I don't know. Do you think Crazy Boy is faking it? Do you think as Andrea from Andrea's Cook Easy blog suggested Crazy Boy might have to be confined to a bubble during allergy season? I could pump in some Michael Jackson music, visit once or twice a day and hand him some smoothies through the little flap in the bubble. Crazy Boy likes it when I dress up in my Haszmat suit. Do you think Crazy Boy might just be allergic to Wednesdays?

I made breakfast for dinner tonight in the hopes that CB would think it was Thursday.

 Homemade Granola with mixed fruit and an Orangenana Smoothie



I included Orange juice and coconut milk, flax seed and rice milk with a little Stevia and about 3 ice cubes in a blender. I flaked and did not pay attention to the measurements I used. :(

Here however is the Granola. It's based on Bryant Terry's black, brown and green granola  from the Vegan Soul Kitchen.
4 C old fashioned rolled oats
1 C chopped roasted almonds
3/4 C shredded coconut
2 tsp cinnamon
1/2 C apple juice
1/2 C melted coconut oil
1/2 C pure maple syrup
2 tsp non-alcoholic vanilla
1 C chopped dried dates
1/2 C raisins
1/2 C dried cherries

Preheat oven to 350 degrees. Line a baking sheet with parchment and evenly spread the oats. Bake for 20 minutes stirring every five minutes for even toasting. Remove from oven and transfer to large bowl. Add the almonds, coconut and cinnamon and stir well. Reduce oven to 325 degrees.

In a medium bowl mix the apple juice, maple syrup, coconut oil and vanilla together. Pour over granola mixture and mix until the granola is well coated.
Pour mixture back on parchment lined baking sheet and bake for 40 minutes until golden brown stirring every 15 minutes.

Meanwhile combine the dried fruit in a small bowl and cover with boiling water to reconstitute. After a minute drain and return to bowl. Set aside.

When granola is done pour back into bowl, mix in dried fruit and pour back onto baking sheet to cool.

I look forward to making dinner for breakfast tomorrow.
So what do you think? Is Psycho Boy just a big baby faker?

  1. that granola looks so good gigi! I've been really jonesing for granola lately... but I'm currently counting calories and trying to lose a few pounds - and sadly - that means no granola for Amey! My time will come. :) As for Crazy Boy... hm. Hard to say. Allergies can be uncomfortable, but it kinda sounds like he just doesn't want to make dinner! Or maybe he just really wanted to have some of your granola!

    Breakfast for dinner is my favorite! My stepdaughter was giving me shit for eating sandwiches for dinner as she ate her scrambled eggs (ew) for lunch as a waffle was cooking for her. I didn't let her get away with it and mocked her mercilessly. She's 6, so it was an easy fight to win.

  4. That looks like some very tasty granola. He was totally working the system, knowing the more he sneezed, the more likely it would be he'd have homemade granola goodness heading his way! (But don't tell Crazy Boy I said that...)

  5. I believe his symptoms are real, and he's actually sick of something, but because my license to practice medicine without a license has been revoked, I'm unable to offer suggestions at this time.

    The granola looks tasty but I have a question. Isn't coconut oil an added oil? Can you add coconut oil to recipes on the engine 2 diet? (This is a serious question, by the way.)

    1. Wait a minute if your phony license has been revoked, who am I going to trust? I need you Andrea!! You must still practice some of the time.

      The only time I go against E2 is for using cocnut oil in desserts or in this case granola. Good question.

    2. Did I say revoked? I meant expired. I'll get it renewed just for you. Unless it really has been revoked. And notice I said sick "of" something. You just have to find out what he's sick of.

  8. My guy has serious allergies this season as well. And they say veganism cures everything. Pshaw. ;) I'd down that dinner in a heartbeat. I love breakfast for dinner. You know what I wish we could figure out how to veganize? Puffy oven pancake. I've been dreaming about it lately. Blast!
