Million Dollar MoFo Cookies

Hey kids, before we get going on the whole MoFo thingy that I told you about in my last blog let's try a song, shall we.
Swallow some water, warm up those vocal chords. Cough cough. Ahem. Lalalalala. I think you're ready. Before we start the "Vegan Day Song" please remember that Vegan is always pronounced Veeeee-gun* (like the pistol). Not vay-gun like ray gun!

Now in your best lounge singer voice, sing to the tune of Happy Birthday. You may begin.

Happy World Vegan Day to Me. Happy World Vegan Day to you. Happy World Vegan Day dear everybody who doesn't like to eat dead animals on a plate. Happy Vegan Day to yooooooooou.

Well that sucked. Try it one more time, and belt to the bleachers.

Phew. That rocked. What a great way for us to celebrate World Vegan Day and kick off MoFo, (Vegan Month of Food). You were so awesome that you deserve a cookie. And not just any cookie...introducing the Million Dollar Cookie. This is a recipe my mom had copied down in the 70's. Then it was called the $250 cookie. It's definitely worth more now . It was called the $250 cookie because it was the winning cookie in a contest and well that's the amount the cheapo judges gave the winner. Here is the veganized version, which in itself is worth a lot more.

Million Dollar Cookie

1 Cup Earth Balance
1 Cup brown sugar
1 Cup organic sugar
1/4 C H2O mixed with 1T egg replacer
1 tsp non-alcoholic vanilla
2.5 C oatmeal
2 Cups unbleached flour
1 tsp baking soda
1 tsp baking powder
12 oz vegan chocolate chips
14 oz dark chocolate
1 1/2 cups roasted chopped peanuts

Preheat oven 375. Grease or parchment line 2 cookie sheets.
Cream earth balance and sugars, and stir in egg replacer and vanilla. Grind oatmeal in food processor  to make oat flour.
In separate bowl mix flour with baking powder, and baking soda. Now add the oat flour to this mix.
Chop chocolate. Set aside. Add flour mixture to earth balance mix and mix well.
Stir in chocolate chips, chopped dark chocolate and chopped peanuts.

Drop batter from small ice cream scoop onto prepared sheets, 2" apart. 
Bake for ten minutes. Cool pans on racks for ten minutes. Remove cookies from pan and let cool, or go ahead eat them warm. You just can't wait, can you? Pour yourself a nice cold glass of rice milk! Thanks for celebrating with me!
