Make This Before the Season Is Over!!!

Hi! Come here often? Well even if this is your first time here-even if you've never used one of Veganville's recipes- even if you're scared to let go and veganize and came here because you got lost, don't go yet. Really. Stay put. This is the one recipe that cannot wait for you to think about going to your local Farmer's Market or feel your way into the kitchen. We made this in my Veganville class yesterday. We ate  every last crumb of it.  If I could eat this dessert for breakfast ,brunch, lunch, supper, dinner and a midnight snack, yeah I would be a pig, but Ooohhh it is so worth it. It is the orgasmic treat of the season and you gotta hurry because fresh blueberries won't be here forever.

Okay gang get your goblets, or parfait glasses ready... and Here it is...
Blueberry Cupcake Parfait

Agave Maple Cupcake Part (Makes 12 Standard)

2/3 C Vanilla Rice milk
1/2 tsp apple cider vinegar
2/3 C agave
1/3 C canola oil
1.5 tsp non-alcoholic vanilla
1 tsp maple flavoring
1 1/3 C unbleached flour
3/4 tsp baking powder
1/2 tsp baking soda
1/8 tsp sea salt

1.Line cupcake pan with cupcake liners and Preheat oven to 325 degrees.
2.Mix the rice milk and apple cider vinegar in a large bowl and allow to sit for a few minutes to curdle and then whisk again. Beat in agave, oil, vanilla and maple flavoring. Sift in flour baking powder and baking soda. Fill liners 2/3's full. (Use an ice cream scoop it's easy) Bake 20-22 minutes until toothpick inserted comes out clean. Cool on rack.

1 box of blueberries, (it's really called a clam of blueberries but there's nothing fishy about it)
3/4 can lite coconut milk
2 T brown sugar per parfait

Line up your parfait glasses or goblets. We used three goblets.Take the cupcakes out of their wrappers. (eating paper might lessen the carbon footprint- but it's not that tasty) Place one cupcake on the bottom of each goblet. Layer each cupcake completely with your fresh blueberries. Pour coconut milk over that layer, then go ahead do up that layer thing again...cupcake, blueberries, coconut milk, ending with some blueberries. Sprinkle 2 T brown sugar over the top of each parfait. Refrigerate at least 35 minutes. Sending you blueberry kisses.
