Espresso Yourself

I know you are racking your precious little cerebral cortex to come up with a dessert recipe I can veganize for Veganville's "Koffee Klotch" contest. Remember creativity is key. Here's a high test dessert made with coffee... I've  included some inspirational music to help you "espresso" yourself.

Hit a Bundt Mocha Cake
1 3/4 C fresh brewed java
2/3 C dark unsweetened cocoa powder
1 1/5 C sugar
3 tsp Ener-G Egg Replacer mixed with 1/4 C water
1/4 C cornstarch
1 tsp non-alcoholic vanilla
1tsp non-alcoholic almond
2 C unbleached flour
1 tsp baking soda
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1 C vegan chocolate chips(optional)

Preheat oven to 325 degrees. Lightly grease 8 or 10 inch bundt pan.
Bring java to simmer in sauce pan, turn down heat and whisk in cocoa until it is dissolved.
In mixing bowl whisk together the sugar, canola oil,  and ener-g-water mixture until the ener-g is dissolved. Mix in the flavorings and chocolate. Sift in the flour and remainder of dry ingredients. Beat for about 1-2 minutes. If using chocolate chips, fold them in.
Pour the batter into the prepared bundt. Bake for 45- 55  minutes until a toothpick inserted in the middle comes out clean.
Remove from the oven and let cool about 20 minutes before inverting onto a serving plate.
Options: This cake is beautiful with fresh fruit, sifted with powdered sugar or a nifty ganache.

  1. OK, how about this...any dessert that doesn't have animal products, booze, coffee, (I know coffee), processed sugar, and artificial sweeteners, that tastes really good.

    How about that? Are you up to the challenge?
