Breaking News Missing Vegan Blogger Found and GF Bagels for the Press

       
                                                               
 Hi Everybody. My attorney, Skutch Sandalman, has advised the public to respect our family's privacy. I understand a lot of readers have expressed their concerns about my whereabouts. Larry and Jerry and I are truly grateful for all the comments and prayers we have received in the past month. We will be sure to reveal more about the case in the coming days. When Skutch first found me I was a little tired and woozy, and my mouth was as parched as PB without almond milk. I had also been on the lamb for a while. I had forgotten my tweezers and wax, which turned out to be a good thing for a few days, since without these modern conveniences I hardly resembled myself and did not want to be found right away. Skutch said I resembled a sloth when he found me. So as soon as I got home, I shared some water with Jerry, then I kissed he and his dad. I then got to work on making gluten free bagels for Skutch and Fletcher and the search crew. While the bagels were rising I had some time to pluck. I had to make a special spread for the press, so I whipped up some Green Goddess Cheez for Skutch and Fletcher and the rest of the nosy body reporters.

Gluten Free Caraway Seed Recipe

I totally riffed the Gluten Filled Bagel found in Isa Moskowitz' "Vegan Brunch". I exchanged the flour in equal amounts of Bob's Red Mill Gluten Free Flour and added 1/2 tsp xanthan gum. I used caraway seeds and Pink Himalayan salt for one type of bagel, and cinnamon raisin for another. Although the recipe says it yields 12, I would make 6 bigger bagels next time because my family has big mouths.

Green Goddess Creme Cheez Spread
Serving Suggestion: highly recommend heirloom tomatoes and micro greens for topping sandwich
1 C raw cashews (soaked in water at least 4 hours or overnight)
1/4-1/2 C Nooch
juice of 1/2 lemon
1 tsp canola oil

1/2 tsp. apple cider vinegar

2 Ripe avocados chunked
2 shots of your favorite hot sauce
sea salt to taste

Drain then blend cashews in high speed blender or food processor until smooth. This might take a few minutes. Add all the remaining ingredients except avocados. Blend until smooth and then add avocado. Blend until you have it just the way you like it, chunky or smooth.

  1. The spread sounds like it'd be great on just about anything but bagels are always a big win. Love that Larry added intense avo chunks to an avocado spread...
    Very nice of you to feed the search crew. They did a fantastic job of getting you back home.

  2. Hi FF. Thank you some people seem to feel that bagels are a big zero because of the hole in the middle but I agree with you they are a big win. Yes they searched high and low for me and wound up somewhere in between.

  3. Welcome home. I've been pretty amazed at how I can use B's Red Mill GF flour in just about everything, but I haven't tried bagels. Gonna see if I can find my grandmother's recipe. If not, I'll turn to Isa.
