Jerry's Plea and Jerry's and Daddy's No Meatball GF Calzone

Below is a special plea from Jerry Tasse, son of Missing Vegan Blogger, GiGi.

The GF Dough
1 C warm water + 1 C warm water for later
1.5 T organic sugar
1 packet active dry yeast
3 C GF "Perfect Flour" Blend plus more for counter top
spray oil

Pour warm water into small bowl and dissolve sugar, add yeast until it foams, approx.10 minutes. Meanwhile, measure out flour and salt in a medium bowl. Add yeast mix after it has foamed and spray generously with oil. Slowly add the C of water just until the dough is easy to work with. Sprinkle some flour on your counter, dump dough on it and knead for about ten minutes. Form into a tight ball. Spray a bigger bowl and then spray the ball and place in the sprayed bowl. Cover with plastic and let sit for about an hour. After that time come back and knead again but this time just for about a minute. Put it back in the bowl. Preheat oven to 375 degrees and spray a baking pan.Take dough out of bowl and cut in half. Roll out to two circles. Place half of filling of your choice (we used tofu ricotta and spinach and TJs vegan shreds) on each upper half of the circle, fold over and then press fork designs all around. Place filled calzones on baking sheet. Bake for 25 minutes.Serve with a side of sauce. Drink lots of water.

  2. The note (warning?) about drinking lots of water has me concerned. Is the calzone DRY? I've never attempted to make GF calzones but am considering it since they are so much smaller than pies, and I wouldn't be responsible for getting the dough onto such a large surface without smushing it. I see that your dough contains no oil. Did that work OK? I mean, it looks good, but how was the taste and texture?

    1. No the calzone is not particularly dry, Andrea. it's just that Jerry misses drinking water with his Mommy.
      The texture and taste without oil was good, but feel free to sub 3 T of oil.

  3. So at first, I thought Jerry wasn't emotional enough that his "mommy" was missing. However, the ending made me believe that he misses her!
